2012 version. Pours brown with medium beige creamy head. Substantial head that lasts. A gingerbread cookie of a beer, aroma of nutmeg gingerbread. Taste is mildly brown sugar sweet with a hint of dark chocolate bitterness. This is a near perfect Christmas beer.

Dark red in color. On draft at the coopers tavern, Madison, Wi 2013. Thin tan head. Atoms of nutmeg and spices. Taste is very spiced with lots of nutmeg and cinnamon finished with a roasted malt taste that is more coffee than caramel. Not as full bodied as u would think.

Dark brown with amber tint and tan head. Caramel, chocolate and ginger aroma. Dark chocolate, roasted malt and ginger flavors with pine finish.

Bottle from Cornelius. Dark brown body with a medium beige head. Excellent lacing. Unusual, evocative aroma of fire wood, ginger, cinnamon, soy sauce, paint and nail varnish remover. Bold flavour of ginger, pine, lavender, chocolate malt and blackcurrant. Medium body with a luscious, oily mouthfeel. Soft carbonation. Christmas in a glass - a stunning, complex beer. This could be even better if cellared for a while.

2011 edition, bottle @ home. Nice head with good lacing. Moderately sweet, herbal nose, hints of licorice, orange, ginger, some clove. Taste is somewhat dry with moderate sweetness. Medium body and soft carbonation. Hints of honey, licorice, ginger, grass. It ends with a nice hitting touch of pepper, and some lightly sour dry bitterness.

From a 2013 edition bottle.The pour is a dark red with a white minimum head.The texture is a medium body with ginger, spruce,bread with a licorice after taste.

Pours a clearish very dark brown with a small light brown head that disappears quickly. Aroma is spicy, nutmeg, cloves, ginger, spruce, and roasted malts. Taste is ginger, clove, roasted malts, spruce, brown sugar, light cocoa, and mild dark fruity esters. Higher carbonation that really works here.

Bottle. Black with frothy head. Spicy aroma, maybe cinnamon. Mouthfeel is effervescent, bubbly, and spicy. Sweet at first, then some alcohol late. Some dark spice as well, maybe clove. A very good Christmas beer.

Huge 2012 bottle served repeatedly in a .2L Peroni glass.
Pours clear dark brown with a towering, dense tan head. Excellent patterns of sticky lacing are left on the glass.
"Holiday spicing" favors nutmeg and cinnamon, leading to a lsting, spicy aftertaste. Solid malt backbone but not as rich as I would like. As is, the spicing is a tad high. Still, a very drinkable and enjoyable winter holiday ale.
