A sour collaboration with Crooked Stave.
Sour ale fermented in fouders with 3 strains of brettanomyces, aged in cognac barrels 11 months with a funky bunch of bacteria.

Bottle at home and pours at WTF. Pours with a hazy brown to deep bronze hue with a small tan head that fades. Aromas are of funk, dark fruit, raisins, currants, very vinous, brandy, earthy leather and light chocolate. Moderate tannins, some brightness, cherries. Flavors are floral, fruity and funky brett, almost a touch tropical, mejool dates, medium sourness, floral, a touch raspy on the back of the throat. Lots of barrel. Good funk, vinous, rich. Fuller carbonation, pretty dry, puckering, tannins. Enjoyable!

Bottle. Dark mahogony-brown beer with a tan head. Sour, light acetic aroma with lots of wine barrel notes. Sour, light acetic flavor with dark fruit and barrel notes. Medium bodied. Sour, light acetic notes linger with cognac, oak, malt, and a nice fruitiness. Very nice.

Bomer, C&C. Hazy brown with a frothy beige head that lasts on the sides but slowly dissipates. Aromas of sour plum and cherry, oak, funk, toasted malt, light vanilla, light caramel, cognac and vinegar. Flavor is sour cherries, plum, oak, funky yeast, toasted malt, light cognac and vanilla. Medium Bodied, acidic and dry. Lingering sour cherry/plum.

Dark reddish brown pour with a light tan pour with a sour and fruity tart aroma. Damn funky with a nice sour flavor profile. Tasty as hell!

Pour out of 750 mL bottle, dark reddish brown pour with lasting tan head, aroma brought notes of cognac, spirit barrel, oak, earth, some lime, lactic notes into a bit of brett, slight red fruity notes. Taste is a mix of sour fruit, raspberry, cherry into a bit of wine, cognac like notes, oak, slightly bitter yeast notes into some lime, lactic, finishing fairly tart, slightly bitter. Tasty stuff.

Thanks to Eric for sharing this bottle. Pours murky burnt ruby / brown (can ruby be burnt?). No idea what to make of this one on the nose. Some grape? Musty basement. Some grape-derived fruit condensed and aged in some kind of nicely charred barrel. A little balsamic. A lot more - I keep smelling and smelling this, interrupted by a search for a bottle of cognac I don’t own to see what the spirit is supposed to taste like. A little molasses and burnt sugars in there. Taste isn’t too tart - just a hint of puke, some sweetness, something almost campfire smoky. Just a bit sweet, lightly tart finish, only the tiniest bit of the sweetened Cheerios thing I don’t like in sours (doesn’t detract at all here - basically just right for my taste). Almost completely flat, medium full body, leaves a film coating my mouth. Feels bigger than the 7% abv actually is. Overall: glass and a half and I still don’t know how I feel, but I’m inclined to like it more and more the more I drink. Pretty cool beer.

Batch #1 Jan '14. Bottle share. Murky mud and big bubble cap that settles a bunch. Aroma of raisin, date, wood, cognac, alcohol, vinegar, cheese. Taste is sour, fruit tartness. Super dry finish from a smooth, medium-high carbonation.

Bottle. Pours hazy, dark maroon brown with rapidly settling off white head, no lace. Aroma is tart and acidic, big vinegar, with a dried cherry and plum, oaky background, hints of sweet cognac. Flavor is moderately tart, vinegar, and dried dark fruit up front, plum, cherry (and apple as it warms). Mellow cognac fading into a lingering oaky, tart finish and aftertaste. The cognac works well with the dark sour, barrel is not overpowering. More barrel character as it warms. Soft carbonation, medium body, and mildly dry, astringent finish.

On tap at The Source. Pours a dark amber with medium beige head that diminishes quickly. The aroma is strong funk, oak, and fruit. Medium mouthfeel with dark fruits, light spice, tart in the finish. Easy to drink, very good.

Batch #1 Jan/2014. Pours cloudy dark brown with red hues. Minimal head and lace. Complex oak, fruit, and spice aromas. Wine-like. Spirit-like. Shockingly complex on the nose and this is still cold. What will bottle age and a more appropriate drinking temperature do to this interesting brew? Flavor is medium sour. Cherry skin tannin sticks to your tongue. Medium body, soft carbonation, and a long sour finish. Most similar to a Flemish sour red, but with huge oak.
