Dark plum appearance. Mild head. Smell is fantastic. So cognac and liquor sweetness. Grapey and prune and toffee. Super grape forward. Fig and plum with sugar cane Splenda and some banana runt. The liquor cognac is really easy to pick out. So nice in the finish

[ Bottle ][ 750mL ][ montrealbctr ][ Tasting ][ Snifter Tulip ][ 5.28.14 ]
>> Clear deep amber pour, tan spotty lace. Nose is tropical fruit, hot red peppers, passionfruit, cranberry, salty acetic. Really odd but nice. Taste is acetic, salty, cranberry. Mouthwatering pickle and salt. Not bad, strange dark sour. Tannic, salty, mild pickle. Quite the bizarre experience.

4.1 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 5/5 OVERALL 16/20
Bottle at the Sybarite Pig in Boca Raton, FL. Shared with Brian. Awesome dark red to brown pour with a fairly clear body. Small one finger head didn’t last long in a tulip. Some mild lacing. Aroma of sour cherries, apples, pears, plums. The taste was a complexity of sour dark cherries, apples, turned prunes, brett yeasts, booze, oak barrel and light spice. Thin body, medium to light carb. Tart, but not overly, finish. Very good.

4.3 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 5/5 OVERALL 18/20
Smooth tart taste at the front that ends with more of a slight sweet finish.
The cognac is subtle but probably helps with the desired finish
I could drink this beer in abundance if possible.

3.6 AROMA 6/10 APPEARANCE 4/5 TASTE 7/10 PALATE 5/5 OVERALL 14/20
Corked and caged 750 ml bottle from Tipples. Pours brown with a half finger khaki colored head. Aroma of green apples, wood, balsamic, some interesting booze notes, twigs and leaves and vegetal notes. Interesting I guess but a little strange. Flavor is light sour black cherries with a hefty bit of dry oakiness, some booze that I assume is the cognac, and a lingering mellow cherry apple vanilla flavor left on the palate. Fruity notes begin coming out from the cognac with additional sips. Medium plus mouthfeel for a sour, with low carbonation--but not flat by any means. A very good sour in the red/brown style.

3.4 AROMA 8/10 APPEARANCE 2/5 TASTE 6/10 PALATE 3/5 OVERALL 15/20
Great beer! Almost like a peachy La Foile. Lots of ripe stone fruits in the aroma as well as some mild sweet chocolate & malt. Very complex stone fruit flavor, very intense ripe peach & nectarine. The flavor finishes with tart unripe stone fruit.

4.2 AROMA 8/10 APPEARANCE 5/5 TASTE 8/10 PALATE 4/5 OVERALL 17/20
Bottle. Pours clear ruby mahogany - beautiful. Small beige head that dissipates fairly quickly with good lacing in its wake. Aroma is very vinous, red wine, some Brett, oak, lemons, tart cherries. Flavor is initially lightly sweet, drying out quickly to a light tartness with just a touch of funk. Lots of oaky, vinous notes - I would swear this was a red wine and not a cognac treatment. Medium body, smooth mouthfeel. Very very nice beer.
