Sour ale fermented in fouders with 3 strains of brettanomyces, aged in cognac barrels 11 months with a funky bunch of bacteria.

Bottle. I enjoyed this a great deal. Aroma of nuts, cereal, cheese, with some citrus in there. Full bodied and smooth across the palate with a dry finish. Taste is tart with earthy finish from the yeast. It was good but I think it will be better with age.

Bottle from Davis Beer Shoppe. Pours dark brown with a modest tan head and a sour treacle aroma. There is a moderately sour brown ale flavor with lots of oak an a warm alcohol trail. Very delicious.

750ml bottle. Slight boozy aroma. Pours dark brown. Hard to pinpoint all the flavors, they are intense. Not a sour that makes you pucker. Enjoyable amidst all itís complexity. Mild cognac flavor mixed with fruity taste.

750 c&c from The Davis Beer Shoppe. Pours dark brown with a transient tan head. Aroma is rather funky in a strange way. Made me think of old ditto machine liquid. Med body. It is strikingly sour at first. Seems to be a bit "solvent". Maunders on to dark berry, and oak. Maybe the berry isnít so dark, and maybe that reflects the cognac. It quickly mellows out (taste fatigue no doubt) to lightly funky, moderately sour, astringently oaky. Very, very tasty all in all.

750ml bottle thanks to my man pat. Pours a dark red with a fizzy tan head. Sour cherry and slight cognac taste, very enjoyable.

750 bottle. Dark Brown pour without much head. Tart Cherry aromas. Dry wood oily flavors. Sour Cherries, some vinegar. Almost hard to describe. Easy sour to drink. The Cognac doesnít come thru, but it helped to tame this sour, its not as biting. Very dry. I would get another bottle.

Bomber from Wilburís. Appearance: slight white head, brown color, clear. Aroma: light spice, vinegar, leather yeastiness, fruity sweet, molasses. Palate: light-medium body, dry finish, thin, soft carbonation. Taste: medium sweet to light tart into a lasting sour finish. Overall, great originality, great balance, and super drinkable for a sour! Lovely, wish I could find more.

Murky, dark chestnut pour. Smallish head not much lace. Acidic, oaky, raisiny nose. Flavor: sharp lemon, juicy cherry, strong oak tannins, sour plum, flashes of light raisin sweetness, mild funk in background. Pretty heavy for style, finishes very dry.
