Ale brewed with summit hops. Triple fermented. First in French Oak Foudres, second in pinot noir and whiskey barrels with brett and other critters. Finally in the bottle for natural carbonation.

750ml bottle pours black with very small thin head. Nose is tart, artificial berry, a bit medicinal. Taste is roasty dark chocolate, ash, medium tartness, fruity. Finish is a smokey dark roast coffee, sweet chocolate, tart dark cherry. Gets better as it warms, but overall itís kind of strange.

Keg@CBC2013 Opaque black color, small brown color. Slightly tart, cellary, some toastyness. Medium-bodied. Malts, tartness, maybe some caramel. Well drinkable beer. Not too extreme and ABV is well covered.

Pours a dark black with a light brown head, aromas of the Pinot noir barrels definitely come through, nice fruit notes come through with a tart finish. Very good overall

Bottle. Batch #1, March/20013. Sour pickles, straight, over powering Pedio. Roasted chocolate, puckering sourness, no hops. Not as complex as I would like it to be. Simply straightforward.

Location/Date:Bottle shared with Dave on November 3rd, 2013.

Appearance: Pours a dark black.
Aroma: Aroma of light roasty, some fruit.
Taste:Light medium wild yeast, light roast, some dark fruit.
Palate:Medium body, quick finish.

Summary: An interesting take on a belgium dark beer, the wild yeast is lightly funky. Not my favorite of ideas, but itís decent.

Batch #1, bottled March 2013 Itís black with a rim of tan foam and a mirrored surface, much different than the foam coming out of the bottle rather persistently. Smells of lacto, lemons, a little toasted malt, some funky resin, a little oak and some co2. Flavor is robust with coffee and soil, then thereís the lemony tart and some bitterness and harshness to it. Itís rather heavy with a low carb and a semi dry finish. Iím torn on this beer, it has the makings of a really nice sour stout, but lacks some of the subtlety I enjoy in some other examples for the malt portion. The bacterial characteristics are a little too dominated by bitterness and almost an aspirin character.

Bottle. Pours dark black with light head. Smells tannin, oak, chocolate, and dark fruit. Started sweet red wine, and chocolate, finished oaky, mild hops, citrus, and caramel. Very interesting and quite tasty.

Bottle from Binnys South Loop (Chicago, IL). Pours a deeper blackish brown hue, well hazed with some darker blackish middle that extends to some muddy brownish glow on the edges and bottom. Brownish head atop stays a bit cakey, but starts to dissipate to a frothy filmy ring, laces ok overall. Aromas show firm wine barrel, tannic red wine and oak meet some decent funkiness, sour cherries, yogurty sourness start to hit the nose. Decent funk as we settle in starts to grow a bit more with dust, cobwebs, leathery life. A gentle roast, but the wild elements and barrel seem to hold the reigns here. Initial is a bit different, opting for a decent roastiness, some gentle dryness as we start to hit the sourness, red wine and sour cherries. Mixing liberally, a medium body further delves into lactic acidity, horseblanket and some cobwebs. Sour cherry, gentle tannic barrel and red wine. Backend offers more bitterness, funk, almost a hoppy feel. The tannic element presses on as the roasty bit up front tapers off. Leather, earth, and decent sourness still keeps going. Gentle Belgian influence disernible at times, touches of fruit and yeast. Still, the barrel and wild yeast lead, the roastiness does some covering up here. Finish is red wine, gentle carbonation, funk and mellow tannic elements trailing out. Overall, this is very well put together. The flavors and combinations might not be for everyone, but I really enjoyed it.
