750 ml bottle purchased at Louisville Beer Store. The pour is black brown with a smallish tan head. The aroma is a really interesting mix of roasted malt, lacto sour funk and a bright lemon citrus. Unusual combination, for certain, though it really works as the sour blends well with the fresh hops. The taste is the funk lacto up front, followed closely behind with the roast of the malt and the citrus of the hops. As with the nose, all flavors integrate nicely. As the beer warms, the red wine and barrel come out and take over for the lacto in the front of both the nose and the flavor. The palate is medium to light bodied with soft carbonation and a dry finish. Fun, well crafted beer.

Dark brown/black with an off-white head. Aroma is roasted malts, oak, hint of red wine. Taste is smoke, coffee, dark chocolate, roasted grains, sour plums. Tasty.

9/13/13. 750mL bottle from Grassroots. Dark pour, almost black, with a surprisingly small tan head. Decent aroma, some roast, ash, and chocolate with a dose of wood and red wine and a bit of funk and sour - not much. More sour in the flavor, complex, better than the aroma led on. Funky, sour, plenty of oak and red wine, but not over the top. Lots going on, pretty tasty.

25.4 oz bottle. Dark brown with spotty beige froth. Nose is Tootsie Rolls, wood and red wine vinegar. Milky medium body with a tang, more woody than sour. Taste is cocoa and red wine getting a bit sweeter with red currants then black pepper. Adds some depth with warming.

Bottle... Poured dark, near black with a moderate, tan head. Aroma had wine-soaked wood with vibrant dark fruits and cocoa. Tasted vinous, lots of dark fruit tones, a hint of cocoa and roast, along with wood and acidity. Funk and lactic acid came into play and push forward the wine-like wood and dark fruit ester characters.

Bottled:
Pours dark -as good as black- brown with a small head. Vinous aroma of cherries, oak casks and red wine. Tart flavour of sour cherries, oak casks, red wine and roasted malt, some smoke perhaps. Alcohol bitter finish. A bit demanding, but pretty good anyway.

750, corked and baled. Pours a murky dark brown ebony with a scant pale tan head that fades. Plenty of wood showing on the nose, with a nice dry airy tartness like the gentlest balsamic vinaigrette you ever smelled. Creamy medium body with lively carb. The triple fermentation has sucked every bit of residual sugar out of this, leaving it dancing on the lightest of feet, with a great blend of dark sour that’s almost roasty with some woody notes and nice acetic complexity from the grapes. Not too many other beers out there like this. Safe to say it’s not for everyone, and no doubt often misunderstood.

Bottle. Poured a clear dark brown color with an average frothy tan head that mostly lasted with good lacing. Moderate to heavy toasted dark chocolate, spice, sour and tannic wood aroma. Medium to full body with a dry smooth texture and flat carbonation. Medium to heavy sour & tannic sweet flavor with a medium to heavy tannic wood dry and sour fruit finish of moderate to long duration. This is a solid beer.

750 ml bottle shared by DrSilverworm (later by Tmoney99). Pours a dark cola brown color with a thin beige film. The aroma has quite a bit of sour lactic qualities interspersed with cocoa, nuts and roast. It is very different than beers like Tart of Darkness, etc. The flavor is much of the same with maybe more tart character. Some vinous notes,Brett and wood. Interesting complex beer. I still don’t like the prices of these.
