Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon. Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered. And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Bottle, shared with Parksy and Grippitis. Cloudy yellow-gold, lacy white head. Incredible fresh pineapple nose with subtle sour/funky undercurrents. Wow, I could keep my face in this all day! Soft sweet malts, fresh pineapple, tart guava, light funk, gooseberries. Crisp, bitter, briskly carbonated, bright and beautiful-- the best of the "belgian" IPAs I’ve tried.

750 ml. Pour is hazy golden with a large topping of meringue. Big nose of lemon zest, toast, spicy pickle and earthy honey. Medium body is smooth with medium carbonation and a nice acidic-sweet balance. Tastes of funked white grape skins, pickle juice, resin and honey. Oak in the long finish is nice.

2015 bottle. Pours a hazy yellow with a white head. Nose is big malt, some mint, big grapefruit hops, some pine, oak, barnyard/ horse blanket, and a vinous tartness. Flavor is similar with wood, mint, caramel, grapefruit and pine in the hops, and a slight tartness. Medium to full in body and layered with flavor. ---Rated via Beer Buddy for iPhone

On tap @ CASK Pub & Kitchen, London - UK. Color: clear blond beer with no carbonation and small white foam. Smell: domination of floral notes, sweet hint and alcohol presence. Very strange nose. Taste: fully body, sweet caramel and floral taste. Sweet notes. Unfortunately too floral for me, and no Chardonnay notes... Aftertaste: alcohol and camomile finish. Very strange. Drinkable but really not amazing. I think the batch was bad.

Keg at the CP&K, 10/11/15. Very lightly hazed golden orange with a decent off white covering. Nose is sticky tropical fruit, candyfloss, bubblegum, apricot, mango, light belgian yeast strokes. Taste comprises bitter orange, nectarine, floral notes, orange wine gums, light yeast, candied fruit peel. Medium + bodied, fine carbonation, semi drying close peppered with tropical fruits and a juicy hop wash. Decent.

750ml bottle pours a golden color with a bit of head. 4 months since this was released and it has transformed. The hops have mellowed and there is a lot of stone fruit (apricot and nectarine) coming through. Delicious.

Keg at CPK. Hazy orange, still, small foamy white head. Aroma is tangerine, damp straw, leafy hops. Sweet and caramelly. Body is medium to light, tingly carbonation, smooth. Taste is really sweet with sherbet, tangy fruits and candied citrus, icing sugar, woody chemical finish. Quite clean but pretty sugary too.

Aroma: brett, barnyard, light exotic fruits. Appearance: hazy, pale gold, no head. Taste: light bitter. Palate: light citrus and exotic fruits, brett, bitters intensifying, dry finish, some wood. Overall: excellent IIPA, feels lighter than its ABV, nice twist on brett. Pint at CASK Pub & Kitchen, Pimlico.

A big thanks to mcberko for this wonderful brew! Cheerrs mate! Dégustée en compagnie de Cédrick et Mademoiselle Irina. La bière est bien voilée et coiffée d’une mousse des plus denses et généreuses! Une splendeur! Nez de brettanomyces, de pomme verte, de baril de vin blanc, le tout parfaitement amalgamé et ponctué d’un houblon frais tel un perce-neige. Vraiment des arômes d’une magnifique complexité! En bouche, les saveurs sont puissantes et largement dominées par la présence des Brettanomyces ayant bien fêté dans ce baril de Chardonnay! Un poivre étonnant s’installe et se marie à merveille à ce dry hop d’une amertume courte mais vive. Y-a-t-il vraiment de l’alcool dans cette bouteille? Un produit absolument délicieux!

750mL bottle. Hazy gold with a good sized white head. Aroma is citrus, straw, yeast, grain, grass, herbal. Taste is of citrus, slightly tart, straw, lemongrass, and oranges.
