COMMERCIAL DESCRIPTION
Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon. Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered. And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Striking gold pour with massive white head. Punch you in the face yeast/Brett aroma. Taste is sweet with a sneaky tartness. More Brett. Nice earthy, grass notes with just a hint of bittetness. Crisp and lively. Beautiful beer.

750ml bottle from Craft Beer Cellar shared with Jo. A few months old like 10 months later.. . Aroma: grapefruits, mangos, white wine, herbacy. App: cloudy golden, small white head, beautiful lacing. Taste and palate: medium body, light sweetness, velvety, soft carbonation, nice fruity brett finish. Overall: wow! Pretty good. Wish I could have tasted this fresher. This is really good. That nose is really good. Wonder how it was 10 months ago. Reminds me of Leo’s Early Breakfast wine barrel aged nose but even better. That mouthfeel is near perfect.

Bottle from craft beer cellar shared with Alex batch from May 2015 A: citrusy, pineapple, tropical, mango, light barnyard, light grapefruit. App: hazy pale smallish white head. T/p: med body with moderate long bitter finish. Moderate carbonation. O: ok this score so well even being that old can imagine a fresh version of this. So fruity and delicious the brett is present but pretty subtle. I will buy again for sure.

Bottle at Mikkeller Bar in San Francisco. Pours a hazy light orange color with a thin, laced head. Piney aroma. Some spruce and hops. Little bit of citrus. Hops/citrus mix in the flavor. Some Belgian in it as well. Slightly bitter. Freaking amazing and different Double IPA. I cannot wait to go to ANC and try the rest of their stuff!

Bottle share, thanks Steve. Golden yellow color with an ample off-white head. Strong aroma of pine, citrus, brett, and oak. Bright and funky. Tastes a little heavier in the bitters before getting lightly sweet and some more funk. Gets a little grassy and dry. Good stuff.

Wonderful stuff. Loads of citrus and a nice hint of florals. Good malt backbone to carry the hops. Hazy orange pour with great head and lacing. If this is how it tastes in bottle I’d love to have it fresh. Bitter finish with some astringent peel and citrus tang. Bottle.

Aroma - smacks of Pacific Northwest Hops (Warrior, Tomahawk, and Cascade) - Pine Nirvana! There is even some booze escaping as well as some Belgian yeast. Appearance - Gold hazy body with a tight head that sustains, lacing all the way down. Taste - is oiled up hops and a boozy Belgian malt & yeast. There is some grapefruit as well as some fig too. Even a bit of leather as well. Palate - is slick and boozy, definitely some hop oil. This is well balanced and ripe for a night cap. It’s a serious drink.
