Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon. Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered. And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Pours a golden yellow color with a big white head. Aroma is belgian yeast, hops, and barnyard funk. The taste is chalky, a little bitter from the hops, belgian yeast flavors and a subtle Brett taste with some oak. In theory this sounds like an awesome beer. I was super excited to try it. Sadly I really don’t like it. The belgian double IPA with Brett sounds exactly like it tastes and it doesn’t work at all for me. I did not enjoy this.

Bottle: Clear, bubbly gold with a tight, white head. Sour yeast, lemon, white wine aroma. Taste is bretty, wood, citrus zest, lemon... Lemon-peel bitter....a bit of pepper. Remarkably sour/bitter. Sharp and bitter throughout.

750ml bottle from a 2012 batch. Pours a clear golden shade with a dense, pillowy white head. First up on the nose are some peachy hops that have been waiting two years to escape. Then Chardonnay plays in. Grassy and floral too. Taste is lemon, lime, tangerine, white grape. Malt is balanced really well. The barrel really does wonders for it, but I’m not sure if the whole Belgian aspect comes through. The brett hasn’t taken over as much as I expected. Very nice but I think I’d prefer a young bottle.

Orange-peach in colour, large lingering White head, excellent lacing. Aroma of peaches, yeast, light spice, light alcohol. Flavour of Brett, yeast, candied fruits, peaches, sweet. Bitter mouth, medium body, med/high carb. Finishes very long, bitter and sweet. Oh my god, this is so good. Incredible balance, unreal.

"nice blend of funky brett and a s@@@load of hops. citra hops stand out, among others. belgian yeast, brett, and hops make this beer dry as a bone, but intensely flavorful and smooth all at the same time. just as i thought their beers might taste the same, this one stands out a bit."

Bomber shared. Omfg pours a murky yellow with with white head. The aroma is funky Brett bready citrus malt, liquid heaven. The flavor is funky bready citrus. This beer is amazing one of the best overall beers ever. The flavors are so nicely blended. There are not enough adjectives for this beer.

Bottle from Mane Liquor. Pours golden orange with a lively, white head. What a nose; lemon peel, orange, lots of brett, lemongrass and some sourness. The age has let the brett take over. The flavours are a step aside from the nose, more focused on the farmhouse than the citric sourness. Lots of hay, damp wood, herbs and spices. Dry finish with a lingering bitterness. Impressive.

Don’t rate beer often. Am a IPA fan. Imperial IPA is hard usually too syrupie or punch u in the face hopps. This tastes like a perfectly balenced nonimperial IPA. Have given to people who hate ipas and even people who don’t care for beer. Consensus is we love it.

White head. Aroma is fruity and a touch bretty. caramel maltY flavor that starts like an belgian yeasty ale with some bretty notea and finishes off like an hoppy ipa. Nice oaky finish that balances everything nicely off. But for me too many elements so the direction of the beer is a little bit unclear. But a nice drink

Look: Pours with huge, puffy, off-white (light yellow hue), medium sized bubbles head. It has a relatively messy, sticky, big bubble breakdown retention. Leaves a solid, thick but sticky top layer that goes down with lots of random lacing. Cloudy, dark yellow and a bit of orange hue.

Smell: Could smell some white wine-ish character on the cork. Very gueuze-like ripe lemon, grapefruit sour, fresh and makes everything lighter. Its a big one. Goes from mango, passion fruit, peach, light strawberries to pineapple, brett and hops did a number on this one. Also very pleasant funk, light leathery. Bit of caramel hidden beneath. It’s very rich, fresh and deceiving, doesn’t hint anything about the 100 IBU, 9 ABV beast hidden in the glass.

Taste: The transition is quite dramatic. Starts with light but well represented citric sour, goes to light-medium smooth caramel, propolis/molasses backbone past pineapple and other tropical notes (a lot weaker than in the smell) to a small, sharp spike of grape stems bitterness but the gentle funk caresses it fast. Ends with medium bitterness, dandelion, bit of medicinal and light sour, which stay strong for quite some time. In the after some wood oak creeps out.

Mouthfeel: Full light heavy body; suiting carbonation, lifts it up. Light alcohol spice but interestingly goes away when it warms up. Also very dry.

Overall: It was a big one, rich, fresh, demanding but still smooth and well roundup. As crazy and tiresome (lambics anyone?) the preparation of this beer looks, it has done it good.

Shared 750 ml. bottle, poured to snifters showing a hazed, orangey gold color, with a frothy, white head that gradually reduced to a bubbly ring & film, and left some dots & dashes as lacing. The nose was subtle, yeasty funk, an array of hints described as dank, earthy, weedy, and floral, and dominant, juicy & fresh, ruby grapefruit. The taste showed the same successful complexity, adding rindy & dry bitterness, a little vinous nature, and decent malt, together in a lively carbonated, medium body. Very nice!
