Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon. Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered. And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Pours a golden yellow color with a big white head. Aroma is belgian yeast, hops, and barnyard funk. The taste is chalky, a little bitter from the hops, belgian yeast flavors and a subtle Brett taste with some oak. In theory this sounds like an awesome beer. I was super excited to try it. Sadly I really don’t like it. The belgian double IPA with Brett sounds exactly like it tastes and it doesn’t work at all for me. I did not enjoy this.

Just perfect. The best DIPA i ever tried. Balance of bitter, citric, acid, winey, just so much complexity and perfectness for one beer!

It poured a cloudy yellow color with a small white head. The aroma was of lemon zest, some pineapple, dry oak, brett and orange peel. The taste was of big pineapple juice with some Brett presence, lingering oak and pineapple. Nice.

UPDATED: MAR 2, 2014 Appearance: Clear golden/amber with 2 finger thick ivory head. Aroma: Leather, pineapple, gooseberry, funk, Brett, acetic (in a good way), citrus. Taste: Medium/high sourness, medium bitterness and low sweetness. Palate: Thick smooth texture, light/medium body, average/prickly carbonation, lingering dry bitter sour, grapefruit, pith, malty, citrusy finish. Comments: Very good and glass lace. Rating for batch #2 June 2012.

Pours hazy dark orangish color with off white head. Aromas of citrus fruits, brett, oak, belgian yeast and some funkiness. Similar flavors with the brett coming through nicely. Medium body with lively carbonation. Another excellent beer from Anchorage Brewing.

Flaska från Brill. Söt fruktig med söta druvor, välmoget päron och de små kornen/stenarna i frukten, söt citrus och mango. Tydlig brett karaktär med fuktigt färskt trä och sav. Rejäl kropp, komplex, fina frukt och brett nyanser som samspelar väl, relativt lätt beska. Helt klockren.

Smak och doft av humle, citrus, tropisk frukt, grapefrukt, brett, färskt trä, mango, sött päron. Fruktig, torr med sträv beska med smak av grapefrukt, tall med maskrostendenser.

Reviewed from notes. Bottled May 2013. Consumed November 2013. The appearance has a hazy yellow somewhat dark orange colored body with a half finger white foamy head that dies at a moderate pace, light somewhat foamy lacing graces the sides of the glass. The smell has some orange up front, somewhat grassy peppery lemon/citrus thing goin’ on in the background, light yeastiness comes forth after some warming. The taste is bittersweet through the previously noted flavors and an added hop note with some grapefruit coming in and punching my tastebuds, citrusy aftertaste, super dry finish. On the palate, she sits about a medium for the most part - hinging on a slight possibility to light, sessionable - maybe. Carbonation seems pretty good for the Belgian IPA style and for me as there’s an adequate harshness and yet its not overbearing whatsoever. Overall, this one is very well done and I would love to have it again with food or just sittin’ on my back porch as a summer sipper.

This one poured a hazy darker yellow with a white head. Aroma was of tangerines, pineapple, citrus, brett, and light funk. Flvor was lots of tropical bretty character and tropical stone fruits. Very intriging blend of brett, im assuming c, and tropical hops. Great stuff, but not sure double IPA is the appropriate category.

Botella de 75 cl en el lúpulo 08-02-2014 en el momento. Color amarillo pálido con espuma blanca persistente. Cuerpo medio - alto con 9 vol que le dan una buena sensación alcohólica y carácter. 100 Ibus maravillosos. Aromas afrutados cítricos y brettas, aumentando sensaciones maltosas a medida que calienta . Sabores bastante afrutados al principio y cítricos, naranja amarga, pomelo... con ligera presencia de acidez y final amargo interesante y persistente en boca durante un buen tiempo. Aumento de matices maltosos al calentar haciéndola un poco mas densa y espesa. Una gran e interesante cerveza doble ipa con el amargor y las brrettas perfectamente combinadas y con ligeros atisbos dulces, en el medio, de Bélgica. Muy buena muy buena, una gran combinación doble ipa y brettanomyces.

Bottle thanks to 5000. Aroma of alcohol, peach and some pineapple. Tastes well balanced but slightly dry. Effervescent. Interesting bit I'm not so sure it's a DIPA.
