Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon. Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered. And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

batch #2. murky yellow with a firm white head. Aroma is very yeasty, some bitter tones like grass and herbs. Reminds me of champagne aroma, must be the oak. Full bodied but easily drinkable. Lively carbonation, very long bitter finish. Very oaky but the yeast makes it incredibly subtle. One of the better brett´s I´ve had. Hugely enjoyable and well made.

Bottle, Thanks a lot Martin!!! Pours hazy golden with a white head. Aroma of funk, brett, citrus, lots of hops. Taste is amazing! Dry, a bit tart and bitter! Lots of brett and tangerine, holy jebus, some spicy notes. This is what a brett double IPA should taste like!

750ml bottle pours cloudy orange with 2 finger head. Nose is dusty lime, juicy orange and citrus, some grassy herbs, light funkyness. Taste is herbal grassy orange zest, dusty lime, doughy oak, some soft white wine funk, juicy citrus. Finishes dry, doughy lemon lime, citrus zest, white wine, soft oaky smoothness, light hint of malt cracker. Awesome.

750 ml. corked and caged bottle. Batch 3 May 2015. Pours a medium, tiny bubbled, well retained off white head, with slight Belgian curtain lacing. over a slightly hazy, dark yellow (SRM 4) body......nose is pine, resin, citrus, herbal notes from the hops, light cereal from the malts, vinous notes from the barrel, hints of clove, light funk from the yeast......taste is slightly floral sweet, with barnyard, citrus notes primarily lemon, hints of orange, moderate funk, slight pine vinous tones, slight woodiness, mild sour notes, finishing with a moderate bitterness......mouth feel, medium body, alcohol warmth present. carbonation makes a creamy mouthful. This is a delightfully complex beer in both aroma and flavor. It is loaded with nuances and is not really an I/DIPA. It is a sour, Belgian, wood aged beer and really does not fit neatly into any of the RateBeer categories. That does not make it a bad beer, just hard to place as to style. BJCP 7/3/14/4/6

Bottle, 75cl. Opaque golden/amber with a frothy offwhite head. Fruity hop aroma with hints of caramel, alcohol, resin, citrus zest. Medium to robust bodied with mdoerate to fizzy carbonation. Sweet and intensely bitter. More of a hoppy Belgian ale than a Belgian IPA. Citrus and alcohol bitter finish. Very nice.

Bottle at de Molen. Hazy yellow pour. Aroma of white wine, bretty, fruity hops, some flowers and slightly cheesy. Flavor is bitter, fruity, a bit sourish. Amazing balance and lovely flavor. Great brew.

750ml bottle I stole from Johnny, I hate that prick .. . Tan .. Really a lot of foam .. Exacto.. Brett, balsa wood, citrus, and dried grass .. Mouth is uplifting, remember the finish .. . Another great brew by anchorage .. . . I eat bugs, what of it?

With Z, pours a rusty light golden pour with a beige head. Nose is sweet tropical fruit, rich in passion fruit. Taste is fruity conflated with spices and some mild tartness. Ends on a hoppy and yeasty finish . Quaff Score 7 /10

Bottle @ home. Cloudy golden orange pour with a tall white head. Nice combination of melon and citrus on the nose. Some tangy pineapple and tropical fruits, too. A bit of pine and yeast as well. There’s a lot of white wine and bitter hop flavor to it. A bit too much oak and bitterness for me. Lots of lemon and grapefruit peel as well. Lacks the fruit character of the aroma.
