Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Found a 2 year old bottle at a store in West Hempstead NY. Got it back to the hotel, chilled it for a bit, took the cage off and the cork shot off. This beer was true funk, a little bitter, a little spice, but it would have made George Clinton proud. Could barely pour this stuff with all the white billowy head. Now I need to find a young bottle to compare to.

Bottle (bomber). Poured cloudy, yellow, white head and spotty lacing and quite a bit of carbonation. Aroma of citrus fruit, wheat and some hops. Taste is both a bit tart and bitter, spices, and citrus notes are predominant but there is also some wine flavors; a bit funky too. Interesting beer with a nice finish. Very drinkable.

Bottle thanks to mrebeks (I think) for sharing. Pours pale yellow with a huge fizzy head that fades to a messy ring. Huge brett-y aroma with citrus and oak. Tastes like sweat, wet grass, barnyard, peppercorns, coriander and tropical fruit. Super dry finish. Interesting beer. I would’ve rated it higher but that extremely dry finish was just a little too much for me.

There is no way this should be classified as an IPA, I mean, sure it says it in the bottle. But in reality this is a Brett superstar. Pours golden, slim creamy white head. Nose is a nice citrus base. Taste follows, light underlying sweetness. Light sourness undulates. Light body, this is fantastic.

Bottle: The aroma consists of citrus, lemon peel, light brett, and a hint of lime. It pours a hazy dull yellow with a ton finger white head that fades to a thin film. There’s a lot of thin webbing left on the sides of the glass. The flavor starts with starts with citrus with a hint of banana. The finish has moderate floral notes, orange peel, and a hint of brett. It’s light bodied with moderate-lively carbonation.

Hop aroma apparent from feet away. Fluffy white head. Spicy Belgium nose, saison like. Very aggressive with tons of flavor.

Fruity, citrus aroma, grapefruit and lemonade. Pours cloudy yellow with a thick puffy white head. Flavor is good, bitter with a slightly sweet finish.

little bit of tart from the funkiness and a slight hop character. very nice champagne yeast. a touch of the aging on the back end. lots of good things here. i would have preferred a little more hop profile from the galaxy.

2012 bottle. The cork shot out of this like crazy as soon as I removed the cage, but the beer didn’t gush, must be the Brett going crazy after 2 years in the bottle. This was an amazing beer, pale straw in the glass with tall fluffy head, sweet yeasty aroma, complex and fruity taste with a slight spice background., still had some good hop presence after 2 years. The adjuncts worked perfectly here, not too overpowering, the same for the Brett and wine yeast. I’m not normally a fan of Belgian style IPA’s, or Belgian beers for that matter, but would definitely recommend this for the IPA drinker after something a little bit special.

Poured in a tulip glass from a bottle. Butterscotch color. Nice head. Poured hazy, giving off a floral aroma, but citrus dominates. There is a lemon flavor that is quite strong along with grassy overtones. Very smooth.
