COMMERCIAL DESCRIPTION
Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

750 mL bottle. Pours a very hazy, pale gold with a huge, frothy, white head. Big, bitter orange aromas, with a herbal note and some minerals. The flavor is very bitter, with a significant sourness. Light to medium body, very sticky, and weakly effervescent. Overall, this is a flavorful and delicious IPA, with a light body and good spicy flavor. Unfortunately, this is sticky mess, with the hops overpowering the wine and wit notes.

Appearance: slightly hazy pale straw with one finger of fluffy white head diminishing gradually to a thick cap, patchy lacing. (3/5) Aroma: lemon zest, wet straw and horseblankety funk, champagne yeast, white pepper. (9/10) Taste: moderate sweet, moderate tart, mild bitter and peppery spice. (9/10) Light body, moderate-high carbonation, dry mild bitter and funky tart finish. (4/5) Well, it ainít all that pretty - but other than that, itís some serious shit. Somewhat surprisingly, given my experience with brett, the head didnít explode out of control - but that aside, this is a full-on brett beer. Big funky tart lemon and barnyard funk on the nose, balanced funky tart on the tongue. I might have to pick up another one of these and cellar it for a couple of years, just to give the brett time to really work its magic. Bring the funk! (16/20)

Hazy peachish pour with a big white head. Tons of lacing. Aroma is bretty funk, pepper, and faint citrus. Taste is brett funk, citrus, pepper, and some dough. Dry finish. Batch #8.

Aroma of barnyard, wet hay, pineapple, nectarine, pepper. Pours light hazy yellow like unfiltered apple juice, big foamy champagnesque white head. Taste is medium bitter, lightly sweet, pretty funky. Light to medium body, thin texture, almost fizzy carbonation, ends funky and a little bitter. You get the pepper corns on the tongue too in a pleasant way. Complex and interesting.

Bottle, 75cl corked. It pours a hazy pale golden body under a big, foamy white head. Thereís lots of lemony brett in the aroma, with pine cones, pineapple, some candied peach, hints of leather and barnyard and a faint grassy touch. Notes of mandarine and also a whiff of pale malts. Even some gooseberries. Itís dry and rather effervescent on the palate, medium to full-bodied, almost tart. Lemon, pineapple, candied peach, some funky flavors and a really fine bitterness in the flavor. Everlasting fruity and bitter finish with funkyness and a faint peppery hint. Itís perhaps a bit too enthusiastic awarding a 9 for flavor, itís not at the same level as the aroma, especially not initially, but the finish is just lovely. It sure deserves a very high rating. I could easily accept this as a regular beer. 160423

Pours hazy pale yellow with a huge white head. Aroma has notes of malt, wheat, brett, funk, citrus, grapefruit, mango, pineapple, yeast and some fruitiness. Taste is light to medium sweet and medium bitter with a long dry, bitter, funky, brett, mango, pineapple, citrus, grapefruit, pepper and yeasty finish. Body is medium, texture is thin to oily, carbonation is soft.

Pours a bit foamy head (half the pint glass) on the lightest straw body. The aroma is a big hit of spices and flowers. Nice. The taste is fairly clean, a little spice, mellow fruits and finishes with a mild lemon bitterness. The texture is crisp. The aroma is great, the flavor may get better with age.

Visual: Twisty wire cap and composite cork. Pours light straw yellow with huge slowly dissipating creamy bubbly head, torrents of fast activity, small bits of sediment. Nose: kumquat banana wheat malt, traces of funk, quite bright. (lvl-6)-pungency Attack: fizzy-bubbly wholeness, Mid-palate: (lvl-4)-sweetness, sharp sour-tangy acidity, (MAIN) background funk, juicy kumquat citrus, banana wheat malt -> dry hoppy bitter Finish: light oak, coriander, dry wheat, lingering bitter hops, kumquat exhale, background peppercorn spice, burpy. Summary: Very refreshing with a boatload of flavours to discover all the while backed up by a very bubbly mouthfeel. Although only medium-bodied, it delivers in smooth transitions and enticing complexity.
