COMMERCIAL DESCRIPTION
Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Batch 2: Misty golden. Towering white crown of clingy meringue. Potently phenolic nose of medical tape, sulfur, white pepper and matchstick along with sherbet, pineapple marmalade, lemon verbena, grassy herbs, celery seed, perfumey hops. New-mown hay aromas lurk beneath. Slightly soapy. Expansive, feathery soft carbonation. Boisterously phenolic from the get-go, with sassy lavender and Russian sage sharpness swirled with brisk bandage- and sulfur-laden phenolics. Crackery, haylike pils malt gracefully restores softness as it blankets the palate with multilayered starches. Grain is supportive, throughout, and mostly clean with the exception of the faintest huskiness (burnt wood) exuding. Twinge of pineapple gorgeously dovetails with the zesty hoppiness and a lemon verbena imbued tartness. Late emergence of floral nectarine succulence couples with a brett-derived peach fuzz bitterness and citrus peel acid to add detail and some welcomed softness to the center. While the hops arenít overly unruly, at times they teeter on an aspirinlike resinous edge which thankfully stops just shy of clashing with the stark dryness and robust herbs. Plenty of redemptive lemon and tropical fruit succulence beneath the hops continually beckons you to take another large gulp. Finishes explosively phenolic and dryly malty with notes of hay dust, lemon and sharp herbs. Nice effort here. Does need a lot of time to breathe in order to soften and coalesce, as itís quite brisk and leans toward stark, early on. Aside from some subtle soapiness - which presumably comes from the coriander as it can take on that character when used excessively - this is very enjoyable.

Lime and funk, lemon zest nose. Hazy yellow, greenish hue, effervescent, huge head. Lemon, brett, grass, oak. Medium body, moderate carbonation. Fantastic!

Bottleíservice not quite a gusher. Killer aroma of tart saison fresh hops. Flavorís sort of a combo of ipa, saison, wild.very drinkable.

Bottle from a friend. Pale yellow color, white head. Bitter taste with citrus, hops, earthy notes, yeast, oak, mango and grass. Bitter finish with citrus, earthy notes, yeast, mango, hops and pine. Excellent IPA.

Appearance: slightly hazy pale straw with one finger of fluffy white head diminishing gradually to a thick cap, patchy lacing. (3/5) Aroma: lemon zest, wet straw and horseblankety funk, champagne yeast, white pepper. (9/10) Taste: moderate sweet, moderate tart, mild bitter and peppery spice. (9/10) Light body, moderate-high carbonation, dry mild bitter and funky tart finish. (4/5) Well, it ainít all that pretty - but other than that, itís some serious shit. Somewhat surprisingly, given my experience with brett, the head didnít explode out of control - but that aside, this is a full-on brett beer. Big funky tart lemon and barnyard funk on the nose, balanced funky tart on the tongue. I might have to pick up another one of these and cellar it for a couple of years, just to give the brett time to really work its magic. Bring the funk! (16/20)

Hazy peachish pour with a big white head. Tons of lacing. Aroma is bretty funk, pepper, and faint citrus. Taste is brett funk, citrus, pepper, and some dough. Dry finish. Batch #8.

Aroma of barnyard, wet hay, pineapple, nectarine, pepper. Pours light hazy yellow like unfiltered apple juice, big foamy champagnesque white head. Taste is medium bitter, lightly sweet, pretty funky. Light to medium body, thin texture, almost fizzy carbonation, ends funky and a little bitter. You get the pepper corns on the tongue too in a pleasant way. Complex and interesting.

Bottle, 75cl corked. It pours a hazy pale golden body under a big, foamy white head. Thereís lots of lemony brett in the aroma, with pine cones, pineapple, some candied peach, hints of leather and barnyard and a faint grassy touch. Notes of mandarine and also a whiff of pale malts. Even some gooseberries. Itís dry and rather effervescent on the palate, medium to full-bodied, almost tart. Lemon, pineapple, candied peach, some funky flavors and a really fine bitterness in the flavor. Everlasting fruity and bitter finish with funkyness and a faint peppery hint. Itís perhaps a bit too enthusiastic awarding a 9 for flavor, itís not at the same level as the aroma, especially not initially, but the finish is just lovely. It sure deserves a very high rating. I could easily accept this as a regular beer. 160423

Pours hazy pale yellow with a huge white head. Aroma has notes of malt, wheat, brett, funk, citrus, grapefruit, mango, pineapple, yeast and some fruitiness. Taste is light to medium sweet and medium bitter with a long dry, bitter, funky, brett, mango, pineapple, citrus, grapefruit, pepper and yeasty finish. Body is medium, texture is thin to oily, carbonation is soft.

Pale golden with rich white head. Slightly fruity aroma. Strong bitterness on the background of wit beer and lambic taste. Some spiciness (coriander?). Lasting bitter aftertaste deeply in the throat.
