Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Batch 2: Misty golden. Towering white crown of clingy meringue. Potently phenolic nose of medical tape, sulfur, white pepper and matchstick along with sherbet, pineapple marmalade, lemon verbena, grassy herbs, celery seed, perfumey hops. New-mown hay aromas lurk beneath. Slightly soapy. Expansive, feathery soft carbonation. Boisterously phenolic from the get-go, with sassy lavender and Russian sage sharpness swirled with brisk bandage- and sulfur-laden phenolics. Crackery, haylike pils malt gracefully restores softness as it blankets the palate with multilayered starches. Grain is supportive, throughout, and mostly clean with the exception of the faintest huskiness (burnt wood) exuding. Twinge of pineapple gorgeously dovetails with the zesty hoppiness and a lemon verbena imbued tartness. Late emergence of floral nectarine succulence couples with a brett-derived peach fuzz bitterness and citrus peel acid to add detail and some welcomed softness to the center. While the hops aren’t overly unruly, at times they teeter on an aspirinlike resinous edge which thankfully stops just shy of clashing with the stark dryness and robust herbs. Plenty of redemptive lemon and tropical fruit succulence beneath the hops continually beckons you to take another large gulp. Finishes explosively phenolic and dryly malty with notes of hay dust, lemon and sharp herbs. Nice effort here. Does need a lot of time to breathe in order to soften and coalesce, as it’s quite brisk and leans toward stark, early on. Aside from some subtle soapiness - which presumably comes from the coriander as it can take on that character when used excessively - this is very enjoyable.

Keg at CPK. Quite a vibrant yellow, hazy, still, small foamy white head. Aroma is wheaty, lemon. Body is light, spritzy, slightly foamy. Taste is earthy, wheat, leaves, jelly babies with extra dusted sugar, chalky, dry papery finish. Dry, dirty and earthy. Not as clean as expected, but decent.

Keg at CPK - London. Pours hazy yellow with a creamy white head. The nose has some creamy pale malts, tangerine, straw, grapefruit. Light sweet flavor with lots of flinty minerals, rindy citrus, cereal grains. Light to medium bodied with average carbonation. Light funky character on the finish, some white grape, pale wood, minerals, grassy bitterness, lemon rind. Novel.

Aroma: light yeast, barnyard, light citrus. Appearance: hazy, light yellow, small, creamy, white head. Taste: medium bitter. Palate: bitters continue, brett, farmhouse, getting quite intensely bitter, light sours coming up, light exotic fruits kicking in very late. Overall: nice IPA, interesting play on brett flavours. Pint at CASK Pub & Kitchen, Pimlico.

Batch #8, April ?15. Big Bottle from Total Wine to glass, light golden slightly cloudy. Humongous light foamy head. Delicate Brett/ lemon /faint leather aroma. Lightish grain/ funk/ mild hops . Intensely dry. This is the true champagne of beers. Pairs great with seafood.

750ml bottle. Pale yellow gold colour, frothy white foam head leaving some lacing and fruity nose with citrus rind, funk, alittle hop. Flavour is malt & grain, with fruity tart citrus, juicy, funk, coriander and peppery, spicy hop bitterness. Light to medium bodied, spikey carbonation, dry sour funky lingering bitter finish. Very drinkable.

750ml bottle at home. Hazy pale yellow golden color with white head. Aroma is funky, spicy and hoppy, bretty, grassy, light citrusy fruity, light wineous. Sweet, bitter and light acidic taste. Medium oily body with lively carbonation.

From the corked, caged 750 ml. bottle. It is a year old so that will probably taint my review. Hazy, yellow pour with a modest white fizzy head that fades. The aroma is Brett and spice. The body is light and refreshing. I pick up a good spice character in the taste with that Brett character all over it. Ends dry.
