COMMERCIAL DESCRIPTION
Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Batch 2: Misty golden. Towering white crown of clingy meringue. Potently phenolic nose of medical tape, sulfur, white pepper and matchstick along with sherbet, pineapple marmalade, lemon verbena, grassy herbs, celery seed, perfumey hops. New-mown hay aromas lurk beneath. Slightly soapy. Expansive, feathery soft carbonation. Boisterously phenolic from the get-go, with sassy lavender and Russian sage sharpness swirled with brisk bandage- and sulfur-laden phenolics. Crackery, haylike pils malt gracefully restores softness as it blankets the palate with multilayered starches. Grain is supportive, throughout, and mostly clean with the exception of the faintest huskiness (burnt wood) exuding. Twinge of pineapple gorgeously dovetails with the zesty hoppiness and a lemon verbena imbued tartness. Late emergence of floral nectarine succulence couples with a brett-derived peach fuzz bitterness and citrus peel acid to add detail and some welcomed softness to the center. While the hops arenít overly unruly, at times they teeter on an aspirinlike resinous edge which thankfully stops just shy of clashing with the stark dryness and robust herbs. Plenty of redemptive lemon and tropical fruit succulence beneath the hops continually beckons you to take another large gulp. Finishes explosively phenolic and dryly malty with notes of hay dust, lemon and sharp herbs. Nice effort here. Does need a lot of time to breathe in order to soften and coalesce, as itís quite brisk and leans toward stark, early on. Aside from some subtle soapiness - which presumably comes from the coriander as it can take on that character when used excessively - this is very enjoyable.

Fruity, citrus aroma, grapefruit and lemonade. Pours cloudy yellow with a thick puffy white head. Flavor is good, bitter with a slightly sweet finish.

little bit of tart from the funkiness and a slight hop character. very nice champagne yeast. a touch of the aging on the back end. lots of good things here. i would have preferred a little more hop profile from the galaxy.

2012 bottle. The cork shot out of this like crazy as soon as I removed the cage, but the beer didnít gush, must be the Brett going crazy after 2 years in the bottle. This was an amazing beer, pale straw in the glass with tall fluffy head, sweet yeasty aroma, complex and fruity taste with a slight spice background., still had some good hop presence after 2 years. The adjuncts worked perfectly here, not too overpowering, the same for the Brett and wine yeast. Iím not normally a fan of Belgian style IPAís, or Belgian beers for that matter, but would definitely recommend this for the IPA drinker after something a little bit special.

Poured in a tulip glass from a bottle. Butterscotch color. Nice head. Poured hazy, giving off a floral aroma, but citrus dominates. There is a lemon flavor that is quite strong along with grassy overtones. Very smooth.

I really dug this. Reminded me of a younger, hungrier Orval wih great new world hopping. Super carbed. Might miss the complexities of the classic, but this is robust, edge of your seat drinking. top notch. Love the saisonesque touches too.

Bottle. Pours hazy gold yellow with big white head, settles rapidly with minimal, stringy lace. Aroma is funky, floral, wheat, sweat, citrus, tropical with piney, mildly resinous hops, coriander. Flavor is floral, brett, funky, with citrus, piney hops and a funky, hoppy, wheat finish and lingering fruity, tropical and hoppy aftertaste. Hops are not particularly bitter, but work well with the brett. Moderate carbonation, medium-light body, and mildly dry finish.

Aroma - definite Belgian yeast quality, there is a presence of coriander some peppercorns, the hops arenít super bold Appearance - body is a golden and a 2nd layer of a whitish yellow; the liquid is clear, but the floating separate layer of a whitish layer that lays on top that is cloudy; head sets up and is about 2" Taste - is lemon grass full, with some nice subtle hops, and some Brettanomyces; nice little funk Palate - body is more medium than light; the texture is like a White ale or a Saison, and a little like champagne; the finish is dank and funky This feels a little more like a Saison than an IPA or Belgian White.

Bottle pour. Cream yellow color. heavy citrus aroma with lemon zest and grapefruit. Delicious hoppy citrus flavors. I had this beer for the first time years ago, and love it even more today.
