Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Clear medium yellow colour with a large o huge, frothy, good lacing, fully lasting, white head. Aroma is moderate malty, pale malt, moderate to heavy hoppy, grass, citrus, moderate to heavy, leather - brett, funky, white wine - grape. Flavour is heavy sweet and bitter with a long duration, funky, leather, citrus, grape. Very complex and very nice ;-) Body is medium, texture is oily, carbonation is soft. [20120914]

Hazy pale gold beer, huge fluffy white head. Lovely nose of mango and lesser pineapple. Light palate, airy with biting fine carbonation. The head has pineapple sherbet! The beer has traces of mango and pineapple that are slightly dominated by the bitter seltzer minerals and yeast. Finishes semi dry with mild bitterness. Pretty good, very drinkable.

The cork pops loudly, and indeed it seems well carbonated, producing a cloudy blond color and giant frothy head. The aroma is harmonious and quite deep; plenty of exotic citrus fruits, with light spicy touch; there is some tangerine aroma too, and very light Bretts. The mouthfeel is very dry, and the carbonation is high; along with some flavor of malt and wheat, there is a nice spice profile from the yeast, delicate Brett notes, and a prominent citrusy character. The final is well bitter and long, with light citrusy astringency.
Harmonious, complex and full of fresh characteristics.
