COMMERCIAL DESCRIPTION
Ale brewed with Galaxy hops, coriander, kumquats, and peppercorns. Fermented and aged in French oak foudres with a wit yeast. Dry hopped with Galaxy hops. Bottle conditioned with brettanomyces and wine yeast. Drink fresh or age to bring out the funk.

Caged and corked 750mL bottle pours with a pale yet bright gold body with faint haze supporting a tall densely cobwebed white head of foam. The aroma offers up lime, tangerine, grapefruit and a sour lime sort of wild yeastiness. The taste has a very effervescent quality and it is so much so it is tough to sink you teeth into the experience. I’m getting fruity and tart grapefruit notes that are sliding into lime like citrus and some citrusy tartness. Pretty nice but the huge carbonation takes detracts from the experience.

Bottle. Cloudy yellow pour with a thick white head, great retention and lacing even a half hour later. Funky bretts on the nose, subtle hops that mostly disappear as it warms, some citrus and spice. Flavour is medium hoppy, allowing the brett and yeast to shine. Some sweet citrus, lemon, spice, bretts. A spectacular white IPA.

UPDATED: SEP 11, 2014 Bottle: Thanks, Mike. Super hazy, pale pear colored body with a foamy white film & collar topping things off. Sweaty Brett loaded aroma with musty old pears, pineapple, & mild citrus. Lots of dusty hay, musty lemon, & sweaty barnyard horse stables. Light floral hops with a hint of tropical guava juice underpinning everything. The taste is so, so dry. Insanely dry, mouthful of brettanomyces. White pepper, spicy as hell with a big, dry, bready yeast profile from start to finish. Hint of lemon flavor, but surprisingly not tart at all. Touch of pineapple, too. A pungent, palate stinging perfume-like bitterness rolls in mid-palate & lasts hand-in-hand with the overloaded Brett profile, leading to a dry & bitter combo in the finish. Peppery, funky, woody, dry & spicy. Clumpy, semi-chunky mouth feel. A nice beer, I really loved the aroma but the flavor was almost too dry, the yeast may be a little underdeveloped. Still pretty decent, though.

750ml bottle. Pours a very light golden / orange color with generous foamy white head. Aroma is complex- some citrus and fruitiness with some funkiness thrown into the mix. Flavor is somewhat tart as well as bright and bitter. Lingering piney bitterness on the palate. This is quite unique and good.

Crisp white wine like acidic fruit aroma. Appears opaque and murky straw color. Solid lacing, fluffy white head. Taste is slightly hopped, balanced with spice presence, drying yeast, and lemon, pear, and melon.

Bottle on the return train from the IOW Jolly, big thanks to Mads for probably the best beer of the day, 24/08/14. Hazed pale golden with a decent white covering. Nose is tangy citric peel, peach, funk, brett slippers and jacket, tangerine, mandarin. Taste carries a trace of spice, tangy apricot, corriander, more bretty funkyness, lemon rind, straw. Medium bodied, soft to fine carbonation, bitter citric drenched hops and funk in the close. Super solid fayre!

Bottle a few times now. Most recently on the train during the IoW Jolly Day thanks to Mads. It pours cloudy golden with a medium white head. The nose is earthy, wood, funk, barnyard, some sherbet, light sweetness, brett and citrus peel. The taste is bitter, funky, earthy brett, wood, citrus peel, sherbet, pineapple, minerals, lemon, brioche and mine must with a dry, earthy finish. Medium body and moderate carbonation. Balanced and rather delicious. Delectable!

Bottle at the Syb Pig in Boca Raton, FL. Snifter. Pours a beautiful golden yellow with a thick fluffy white head. Some mild lacing. Clean looking. Bubbles. Aroma is brett, light pine hops, light citrus, and coriander. Taste is brett, pine, cereal, citrus, coriander, white grapes, and funk. Clean finish with brett. Light body, refreshing. Really good beer.
