COMMERCIAL DESCRIPTION
This is a variation on the classic Belgian Witbier style, but aged in French Oak Chardonnay barrels

Brewed with lemon peel, black peppercorns and corriander (sic).
Triple fermented - first in the tank with Belgian yeast, second in french oak Chardonnay barrels with brettanomyces, and finally in the bottle with a third yeast for natural carbonation.

Pours a quite bubbly chalky white-golden with light white head. Aroma is funky-musty like wine and damp old wood and lemon peel. Dry with nice tropical fruitiness and a hint of musty wine and brett. It is very light yet complex and flavorful, very enjoyable.

Bottle. Pours super light yellow and fizzy, almost champagne-looking. This drinks with a definitive funky edge, a certain wild aspect that carries like some old, water-logged wood. There’s a bit of lemon peel and oak, as promised, and maybe a bit of juniper thrown in. I’m not as high on this as others ... don’t care for the over-effervesence in combination with the overly complex combination of flavor components. (#5026, 5/22/2013)

75cl bottle split wth Tomaz @ home. Dorée claire devenant trouble mi-bouteille, col fin blanc champenois. Arôme est boisé avec un petit côté vin blanc, raisin le tout accompagné d’un bouquet épicé agréable. Le brett rajoute aux effluves boisées et fruitées qui restent correctes pour le style de la bière. Palais est ici aussi légèrement boisé avec une petite note abricot, vin blanc, qcq agrumes sur ce Chardonnay léger et une pointe de coriandre. Le brett reste modéré, note de pelure agrumes pour une bière restant légère et complexe. Petite note de grains et malts avec un boisé épicé de chêne arrivant en toute fin de bouche. Très bonne, à partager mais un poil chère.

Big thanks to JR for breaking this one out. Nice lemon zest in this one. Has a slight woody quality from the chardonnay barrels but nothing over the top. Slightly tart and maybe even a tad sour.

Poured from a 750ml bottle. Great packaging. Big citrusy, lemon, acidity in the aroma, malty, effervescent, doughy, dusty. A great wit beer.

Bottle from Market of Choice, Eugene. Pours a light cloudy golden color, little to no head. Aroma is heavenly; brett, funk, barrels, white wine, white fruit, sumptuous! Body is very lively, spice in coriander and pepper hits surprisingly strong in finish. Tart, bubbly, not as dry as one might think. Perhaps the most unconventional "wit" I’ve had. Not bad, just VERY different...

75 cl corked bottle @ home. Pours cloudy pale yellow with a white head that leaves a little lacing. Aroma is citrus, spices, a little funk, oak, yeast, and white wine. Flavour is citrus, spices, funk, and white wine – with a dry finish.

Thanks to blutt59 for sharing this bottle. Light yellow color with a large white head. Aroma is heavy on the wheat and lemons with some light brett. Flavor is brett, leather, orange and wheat. Medium mouthfeel and medium carbonation.

From bottle at HOTB. Smooth yeasty Brett notes, sweet. Subtle nose by very nice. Cloudy straw-white with thin white head. Medium body with light carbonation. Starts yeasty and Bretty with sweetness and a hint of light funk or tartness. Tasty and smooth.
