COMMERCIAL DESCRIPTION
Complex beer brewed with redwod tips and New Zealand Nelson Sauvin hop - 35% was soured in stainless - of the remaining beer 60% was aged in red and white wine barrels and 40% split between Brandy and Bourbon Barrels for aging. All of these beers were blended with a small amount of our Grand Cru ( Brother Davids’s Belgian ales aged in wine barrels)

Draft. Clear maroon color, bright tan head. Aroma of slightly sour caramel. Taste is very sour and acidic vanilla and lemon juice. Rough stuff.

(draft @ Tap and Mallet - Rochester, NY) Dark and murky ruby red pour with a thick and puffy tan head. Slightly tart but rather sweet aroma with a good amount of wood and wine hints. A bit sweeter and with a lot more fruit notes than I was expecting from a bruin, but still rather tasty. Mild tart and sour notes with a lot of dark fruits, wine and oak hints at the end. Smooth and sweet finish.

On tap at Bistro BA Fest poured a cloudy amber with a small lingering amber head. Aromas of saurkraut, fruittiness and light carmel. Palate was light bodied and crisp. Flavors of carmel, fruittiness and light bourbon with a crisp lingering fruity finish.

On tap at the Bistro BA Fest. Pours brownish copper with a thin beige head and a winey aroma. There is a sourish brown ale flavor with a vinous finish and a slightly warm alcohol trail. Pretty complex for a 5% beer.

On tap at the Bistro -Bal Aged Fest. Cloudy reddish amber in color with minimal head. Fruity cherry aroma with caramel and wild yeast notes. The flavor is pretty good with caramel, leather, oak, cherry/fruits, and alcohol. Medium body and a bit low on the carbonation. Solid but not great for the style.

Tap at the Bistro BA fest. Pours slightly ruddy amber. Decent sour aroma. More than full bodied. Brown sugar with sour. It’s also hoppy and a bit vinous. It’s complex. Brilliant.
