Cider House Collection #2: Inspired by the tradition of Ice Ciders in Quebec, Canada, Iceman uses the process of freezing the juice from culinary and bittersweet apples to produce a rich, complex and unique cider with a crisp apple taste and notes of caramel and toffee. This cider is sweet but not cloying. The addition of oak-aging yields a smooth and pleasing vanilla character. The result is a perfectly balanced, full-flavored cider that delights the palate with clean apple notes and a lingering toffee finish.

Clear gold pour. Tangy apple aroma, some sulfur. Very tart granny apple flavor punch in the face. Sweet and sour. Alcohol noticeable.

Pours a golden apple juice color which is very clear and with no head though very carbonated. Aroma is caramel, apple, toffee, white wine. Taste is surprisingly sweet to the aroma, notes of apple, maple syrup, caramel, toffee, vanilla. This is extremely palatable, not dry or sweet but the in between that makes you go back for more. Definitely more of a body to this than other ciders I’ve had. Overall, great drink, especially for 10%.

750ml, corked. Blue label. Dark amber color. Aroma of tart fruit, apples, smells like concentrated apple juice. Whoa, very strong. High acidity. A little too strong to draw out any flavors besides apples. Solid & rich body. A bit too rich and thick for me to enjoy, well worth the tick. (3996)

Very light carbonation. Golden in glass, very clear. Nose of apple (surprise!), some light cinnamon. In the mouth concentrated Apple flavor,a but thick, vanilla, finishes with some tannin. Somewhere between a cider and desert wine

Appearance: Very light fizz on the pour, but this settles to a vibrant and clear amber color.
Aroma: The aroma leans a bit sweet with apple. I get no oak notes or anything else, just apple.
Taste: Okay, now I get it. Very light tannins with sweet apple and some vanilla. Definitely a desert drink. Definitely enjoyable! The finish lingers of apple peel.
Palate: Full-bodied and highly sparkling.
Overall: This is sweet in a way that I don’t know if I’ll finish the 750 without a minor hangover, but it’s very enjoyable. I know that many would likely scoff their noses at how sweet this is, but this would definitely replace ice wines and other sweet desert wines for me if for nothing more than the carbonation. I enjoy this for what it is, well done.

$17.99 a 750 ml bottle makes it worth trying, but uncompetitive with most hard ciders. Fine apple taste, but alcohol shows. Too clear for a "craft" cider.

750 ml. Clear orange-golden body has some bubbles to sustain some small islets on top. Nose is caramel, apple and vanilla. Taste is lightly tart apple, oak, alcohol and caramel. Light-medium body is to the sweet side, has average carbonation and a touch of warmth.

75cl bottle - pours clear honey. Nose is sour apples and booze. Remindds me of decent champagne. Yummy and warming. This is good! Sweet adn tart.
