The nose is honey and heavy woody and floral components, with just a slight hint of vanilla. Sweet honey and alcoholic fruitiness, combines with wood and wet grass, straw. Quite booze laden and also syrupy, but in the proper dosage, this is quite a treat. It’ll take a me a while to finish this bottle. Very pale yellow-gold colour, looking a bit dish-watery - that’s not very promising. But then I check the aroma - big, warm honeycomb with a slight oakiness - oh yeah, that’s nice! Medium bodied, quite smooth. As Harry notes below, it tastes like honey with a nice floral character, with a hint of the oak from the aroma coming through in the flavour as well. Pours a hazy, light, light, light gold with no head. Strong aroma of alcohol, sweet honey, apples and wood. Strong boozy honey flavour, sweet and woody along with some spices and apples. Medium bodied. Good but I don’t love it, a small sample is definitely all you want -- very sweet and very boozy. (7+) Sweet honey in the flavour is simple but rather pleasant, alcohol warms the throat quite heavily but is not particularly noticeable in the flavour. (7+) Smooth medium bodied palate. HogTownHarry (3141), Toronto (Harbourfront), Ontario, Canada May 27, 2008 Bottle (750ml - clear & corked). At 2nd Annual Summer Saison Tasting - my bottle via trade with Matt7215. Have to say it didn’t start out weel - that’s NOT an appealing pour - wan, watery light gold, no head, not much legging. But - mmmm - woody, musty not too sweet aroma of honey and hazelnuts. The taste is where this really shines - perfumed honey and clover, rosehips and orange blossoms, delicate and smooth with just a hint of oak. Light bodied, like thin syrup, no harshness at all, and extremely muted alcohol - the primary finish on the palate is floral honey, reminded me of the orange blossom honey we used to buy in Florida, with a hint of nutty wood in the last gasp on the tongue. Really f’in good - we had fairly large pours out of this bottle, and many of us were seriously digging it. Probably my tipple of the tasting.
