750 ml bottle from HogTownHarry! Thanks! Nose is sweet honeycomb right out of the hive, with some woodiness and golden delicious apples; translucent pale yellow with no head or bubbles; favor is like a light colored wood such as ash, with honey, appley notes and some light alchol warmth. Excellent mead!

Bottle (750ml - clear & corked). At 2nd Annual Summer Saison Tasting - my bottle via trade with Matt7215. Have to say it didn’t start out weel - that’s NOT an appealing pour - wan, watery light gold, no head, not much legging. But - mmmm - woody, musty not too sweet aroma of honey and hazelnuts. The taste is where this really shines - perfumed honey and clover, rosehips and orange blossoms, delicate and smooth with just a hint of oak. Light bodied, like thin syrup, no harshness at all, and extremely muted alcohol - the primary finish on the palate is floral honey, reminded me of the orange blossom honey we used to buy in Florida, with a hint of nutty wood in the last gasp on the tongue. Really f’in good - we had fairly large pours out of this bottle, and many of us were seriously digging it. Probably my tipple of the tasting.

UPDATED: AUG 30, 2008 2000 vintage, Sampled at Jans Saison tasting! With thanks to HogTownHarry for supplying the bottle. Rating numer 500!! Phew. Appearance: Slightly hazy white wine colour, sticky, the glass was coated with the mead. Aroma: Boozy, honey and cream, cinnamon and spice. Flavour: Huge honey flavour, like drinking a glass of honey rum, alcohol very evident however not off-putting. Some apples in there too, sweet, sweet, sweet! Very enjoyable, thanks Harry!!!!

Pours a crystalline yellow. Aroma is a symphony for the senses. Apples, pears, cranberries, angelica, plums all make an appearance. The honey is very evident, intoxicatingly so. The flavor is sweet and viscous, with a warming honey flavor the envelops you. Simply an awesome mead.

Courtesy TheCheeseMan. 2000 Vintage. The still, full bodied liquid shines a lightly hazy, pale golden color. A swirl of the glass reveals thick, syrupy legs like only a mead can. Sweet scents of honey, pear, and apple brandy show incredibly fresh for an 8 year old concoction. The flavor is somewhat unique for a mead, in that the fruity apple and pear take precedence over the honey character, which makes for a nice change of pace. The brandy element is somewhat alcoholic, but nearly as much as the label would indicate. The mouthfeel is full and viscous, like it should be. Great dessert beverage. I’ll be buying more of this.

2000 vintage from my snifter. pours pale honey yellow with no head or carbonation. not transparent but not hazy, very thick looking. aromas are boozy with honey covered apples and lavender. flavours are out of this world. golden apples baked with cinnamon give way to honey. Satisfyingly complex while at the same time being palatable. Loses one point for noticeable alcohol on the palate. A wonderful drinking experience.

Bottle (2000)... VBWT2008... Almost colorless (ultra-light straw) with decent legs. Orange blossoms, wild flowers and ethanol dominate the nose with only a rumor of menthol thrown into the mix. Full-bodied, syrupy and a touch oily. Very, very sweet and alcoholic, but, relatively speaking, not at all bad considering the 20% ABV in this monster. The finish is all sweet and heat. Very nice! Thanks to TheCheeseMan for always providing a “non-traditional” or two to add even more variety to our Orlando Crew tastings!

Bottle, thanks for picking it up for me Jerc and mabel! Nice medium yellow, no head. Pure honey aroma. Taste - good. Pure honey, most natural tasting honey mead I have ever had. Almost earthy, especially in finish. Stunning taste = very drinkable, not too hot. Wonderful soft tingly mouthfeel. A perfect after dinner sipper is small doses.

Bottle- 750 ml from the winery- Straw liquid pours and on the swirl, leaves nice syrupy legging. The nose is honey and heavy woody and floral components, with just a slight hint of vanilla. Sweet honey and alcoholic fruitiness, combines with wood and wet grass, straw. Quite booze laden and also syrupy, but in the proper dosage, this is quite a treat. It’ll take a me a while to finish this bottle.
