Pours orange and still with a decent neck. Smells smoky and spicy with some underlying apple sweetness. Tastes sweet at first, before the hot peppers assault the senses. An interesting experiment and I love hot, but the chilies clashed with the subtle character of the apples, making for a somewhat messy cider.

375 ml bottle- A deep rusty gold. Syrupy legs on the swirl. Looks thick. I have a peppercorn in my glass too. Nose of musty apple mixed with white pepper and cayenne. A bit of earthiness. Tastes of peppercorns and chilies, then sweet apples. Quite syrupy and coating in the mouth. I was looking for this heat to be repressed a bit by the "refreshing" qualities of apple cider, but man this is hot, and it does not let up. An interesting concoction, one that a small amount of is enough. I’ll use some as a marinade perhaps.

aroma is peppercorn,wood,spice,and peppers.flavor is to hot from the thai peppers.i pick up some apple and wood in the back.the peppers just killed it i.m.h.o.

375ml bottle of 2005 vintage from Harry! Been burning a hole in my cellar waiting for Enniskillen to come and share it. His first glass had two peppercorns in it, mine poured out three Thai peppers. Nose of apples, mild chili, woodiness, and pepperiness. Very lightly hazed gold with no carbonation. Flavor of the Thai peppers which I buy fresh each time I go to a Bistro Beer Fest at the Farmers Market that is there each Saturday mixed with appley sweetness and woody undertones. I am going to eat the three peppers that poured into my glass and then use some of the three inches left in the bottle to make some chili after I finish the rest of the cider. This ain’t no Cave Creek Chili Beer! Nice and hot sweetness!

Gold with a red tint to it. Aroma is very oaky, with peppercorn, apple, smoke- reminds me of the smell around a campfire while camping. Taste is spicy, light alcohol, apple in the background. Very spicy stuff. It’s good, but I would never consider drinking more then a couple ounces in a sitting. I would use it in chili for sure though!

courtesy of mcbackus. WOW. smells like potporri (yeah, i can’t spell). like a farmside village. tastes like I swallowed an apple candle while it was still on fire! extreme hot. almost overpowers all other flavors. I have never had anything like this before.

bottle from matt7125: pours with a pepper floating in the glass and a nice apple juice colour no head. aroma is fantastic like walking into a amish counrty store back home after strolling through the country woods, with some awsome apple and pepper slight spiceyness adn tons of black pepper. flavour is really hot with tons of chili pepper and black pepper slight apple behind that bery different but good.

WOW is all I have to say.This was a great cider till the fire hit.This had peppery heat all on the back end.Full peppercorns floating in my glass.I couldn’t do much of this.Great concept but couldn’t finish it.

It burns!!! Cayenne apple aroma warns you of what to expect. Clear gold with no head. The sweet apple taste quickly turns into a burning sensation on the lips and down the throat, what a mix. Definitely a winter warming shot, a shot is all you need. I like hot but this is HOT. Gotta try this on chicken wings or at least drink it while I have the wings.

Bottle (375ml) shared with some friends. 2005 vintage. Pours a hazy yellow-orange with no head (of course). Very nice smoky, spicy apple aroma. Flavour: So spicy but still very apple-ey -- whoo, I love this! Hot & spicy, oh so very HOT, but surprisingly there’s still a good amount of the apple ice wine that comes through. Syrupy mouthfeel, thick bodied. Wow, what an experience!
