COMMERCIAL DESCRIPTION
Our iced cider bottled with a mix of hot chillies and mixed pepper corns. Wickedly hot! Try splashing this on to grilled chicken, shrimp, etc.

Bottle shared in Hoboken - thanks to Andy. Pours clear, deep gold. The nose holds rich, ripe apples, hints of pepper, a bit of dry smoke. Hugely sweet with lots of ripe, juicy apple, then a big smack of chili pepper burn. Full bodied, oily. Hot chili burn on the finish with undertones of sugary, ripe apples and hints of caramelised sugars. Quite novel, but the chili heat is too much for me.

Bottle at Max’s. Pours a deep maple brown with no lacing. Aroma is deep maple and Apple cider with nice spice. Mouthfeel is thick with lots of space e coming through. Really cool and interesting ice cider.

Boutip (4868) - Gatineau, Quebec, CANADA - MAR 6, 2014
Bottle: Poured a deep amber color cider. Nose of peppercorn and hot peppers is offset by some sweet apple notes. Taste is also dominated by loads of peppercorn notes with quite a bit of heat from the hot peppers. Sweetness is able to balance some of the heat but not enough to make this really drinkable.

Finally adding my 2012 Christmas tasting notes!. 2008 bottle. Dark amber. Honey and overripe apple scent. Can smell the spice. Flavour is spice and very sweet. The sweetness contains the heat till the back end. Probably would be better used in cooking. Five of us left half a bottle untouched. Like the heat but not the finish or sweetness. Thanks to Sammy.

2013-08-17. Dark amber body is headless with syrupy legs on the glass. 3+ Aroma of firey chilis over muted sweet fruity apple character. 7+ Flavour is burny, yet the sweet cider base is lovely. The chilis and the cider initially work nicely together until the pepper decides it is finished with collaboration and the burning grows exponentially. Very smooth medium to full bodied palate, no carbonation. The burn of the chili peppers is ultimately the dominant character, which is not to my own taste at all. Bottle shared at Campground Brewdown.

"It’s amazing how this reset my entire... Face."

Sampled this at Campground Brewdown 2, thanks to Jeremy and Karen. Pours a clear amber. Soft smoke and bright acid over apples. Gentle heat, spicy chiles paired with mellow caramel apples. The heat here is very gentle , warm with a bit of heat, acid, sugared apples. Tart acidic apple tones with some lingering heat. This was very very nice. Would love to have this again.

Bottle. Pours amber gold with a thin head. Rich caramel apple aroma. The flavor has a good punch of spice that lingers, almost too much, but not quite, with apple and spice in the background. Not bad, I guess. I’d have liked it more without the chili though.

Campground Throwdown 2, 375ml bottle. Still deep amber body. Aroma is moderately sweet, apple, some caramel, light smoke. Taste is sweet, apple, hot pepper, syrup. Sticky full body, some pepper burn.

Not for everyone, this is the 2008 ice cider with lots of peppercorn. Instructed by Matt to drink it in a certain way (take a swallow into mouth, in essence gargle, and then swallow) it was most interesting with supper, but needed much liquid at the endof the meal. Good balance, heat is right there.

Pours orange and still with a decent neck. Smells smoky and spicy with some underlying apple sweetness. Tastes sweet at first, before the hot peppers assault the senses. An interesting experiment and I love hot, but the chilies clashed with the subtle character of the apples, making for a somewhat messy cider.
