3.1 AROMA 7/10 APPEARANCE 4/5 TASTE 4/10 PALATE 4/5 OVERALL 12/20
2013-08-17. Dark amber body is headless with syrupy legs on the glass. 3+ Aroma of firey chilis over muted sweet fruity apple character. 7+ Flavour is burny, yet the sweet cider base is lovely. The chilis and the cider initially work nicely together until the pepper decides it is finished with collaboration and the burning grows exponentially. Very smooth medium to full bodied palate, no carbonation. The burn of the chili peppers is ultimately the dominant character, which is not to my own taste at all. Bottle shared at Campground Brewdown.

4.3 AROMA 8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20
Sampled this at Campground Brewdown 2, thanks to Jeremy and Karen. Pours a clear amber. Soft smoke and bright acid over apples. Gentle heat, spicy chiles paired with mellow caramel apples. The heat here is very gentle , warm with a bit of heat, acid, sugared apples. Tart acidic apple tones with some lingering heat. This was very very nice. Would love to have this again.

3.4 AROMA 8/10 APPEARANCE 3/5 TASTE 6/10 PALATE 3/5 OVERALL 14/20
Bottle. Pours amber gold with a thin head. Rich caramel apple aroma. The flavor has a good punch of spice that lingers, almost too much, but not quite, with apple and spice in the background. Not bad, I guess. I’d have liked it more without the chili though.

3.4 AROMA 6/10 APPEARANCE 3/5 TASTE 7/10 PALATE 3/5 OVERALL 15/20
Not for everyone, this is the 2008 ice cider with lots of peppercorn. Instructed by Matt to drink it in a certain way (take a swallow into mouth, in essence gargle, and then swallow) it was most interesting with supper, but needed much liquid at the endof the meal. Good balance, heat is right there.

3 AROMA 7/10 APPEARANCE 3/5 TASTE 5/10 PALATE 3/5 OVERALL 12/20
Pours orange and still with a decent neck. Smells smoky and spicy with some underlying apple sweetness. Tastes sweet at first, before the hot peppers assault the senses. An interesting experiment and I love hot, but the chilies clashed with the subtle character of the apples, making for a somewhat messy cider.

3.6 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20
375 ml bottle- A deep rusty gold. Syrupy legs on the swirl. Looks thick. I have a peppercorn in my glass too. Nose of musty apple mixed with white pepper and cayenne. A bit of earthiness. Tastes of peppercorns and chilies, then sweet apples. Quite syrupy and coating in the mouth. I was looking for this heat to be repressed a bit by the "refreshing" qualities of apple cider, but man this is hot, and it does not let up. An interesting concoction, one that a small amount of is enough. I’ll use some as a marinade perhaps.

4 AROMA 8/10 APPEARANCE 3/5 TASTE 9/10 PALATE 3/5 OVERALL 17/20
375ml bottle of 2005 vintage from Harry! Been burning a hole in my cellar waiting for Enniskillen to come and share it. His first glass had two peppercorns in it, mine poured out three Thai peppers. Nose of apples, mild chili, woodiness, and pepperiness. Very lightly hazed gold with no carbonation. Flavor of the Thai peppers which I buy fresh each time I go to a Bistro Beer Fest at the Farmers Market that is there each Saturday mixed with appley sweetness and woody undertones. I am going to eat the three peppers that poured into my glass and then use some of the three inches left in the bottle to make some chili after I finish the rest of the cider. This ain’t no Cave Creek Chili Beer! Nice and hot sweetness!

3.4 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 3/5 OVERALL 13/20
Gold with a red tint to it. Aroma is very oaky, with peppercorn, apple, smoke- reminds me of the smell around a campfire while camping. Taste is spicy, light alcohol, apple in the background. Very spicy stuff. It’s good, but I would never consider drinking more then a couple ounces in a sitting. I would use it in chili for sure though!
