COMMERCIAL DESCRIPTION
The sour base is the standard lager. after fermentation has started we inoculate the batch with lactobacillus bacteria (used to make yogurt). the bacteria gives many complexed flavors to this beer. For the first taste it is some what sour. After you become acclimated to the sour you start to get hints of dill and garlic, sweet bread, pineapple, and finishing with green apple.

on tap at Trinity. Cloudy yellow amber color. Very sour. A little bit of acetic acid. Fruity with lots of peach, apricot, and green apple notes. Excellent and super easy to drink.

Cask Stillage at Indulgences Etc, Denver 23/09/2009 Sour aroma. Amber coloured strong in alcohol and sour with a little dryness in a crisp finish.

This beer has a light tan colored head with a lightly hazy, copper-amber color. The aroma is tart up front with a phenolic plastic like finish that is not unpleasant. Brettanomyces-like funk provides aromas of stale sweat, cured leather, musty - lightly moldy blanket and a musky goat like note. There are some solid fruity notes underneath the more expressive funk that produces aromas of cherry, expressive - tart plum, and a very floral, fruit aromatic note that seems a mix of orange blossom and honey-suckle.

The beer is sour tasting, but in addition to the typical lactic acid notes there is a solid acetic character to this beer. The acidity accentuates some fruit flavors that almost provide a ghostly sweetness to this definitely dry beer; flavors of tamarind, sour raisin, chewy cherry vinegar, a touch of strawberry and even a touch of fruity balsamic are all noticeable. This is quite quaffable and while light bodied, it does have enough viscous heft to stand up to the sourness.

I had rumours that the bugs for this beer were taken from inoculating swabs of vegetable-produce, something that makes this beer a bit more interesting. This is surprisingly balanced in its funkiness. The aroma started out a bit slow but really picked up steam and become more complex and interesting. I am quite amazed how well integrated the flavor is, this must have picked up a nice balance of bugs. I am definitely enjoying the acetic acid component, it adds extra complexity and brings out an expressive, aromatic fruit character.

(Growler and Draught samples) Pours a clear golden body with a small white head. Aroma of sour grapes, citrus, apple, some syrup, and light soapiness. Flavor of vinegar, yogurt, chardonnay, watermelon, and some herbal qualities with a moderately dry finish.

GABF’08. Aroma is lentil soup with faint earthy sourness. Seriously, this was weird and off on the nose. Taste however cleans up with some actual nice sourness and a hint of chocolate to it. Its very original and works great. A very palatable brew, just fix up that nose.

UPDATED: OCT 10, 2008 Sampled from a growler. I think this is the right spot but it might be something else to sort out after GABF weekend is done. Clear copper brown colored body with minimal head. Nose is red apple skins, a touch of sweet honey and a good amount of apple cider vinegar funkiness, along with a distinct note of red wine grapes and dry, tannic wood. I was told that this is merlot-cask aged? You can certainly tell. Lightly acidic and prickly on the tongue, fruity but semi-tart red apples, honey that seems to amplify over time, and a nice, prickly and funky white wine note throughout, reminds me of the wine character in Cuvee de Castleton batch 2. The next thing I put in my glass smelled like pickles, FWIW.

draft @ trinity. Murky orange brown with pure white head. A light sourness of apples. A nicely fruity sour body with faint oak showing through.

Growler: Thanks BeerandBlues2! Pours a headless hazy deep copper color with no clarity. Aroma has some sweet & tart apple cider, candied malt notes, a hint of vinous character and a very mild note of fig as well. Slick and thin bodied. Flavor has some lactic cultures. Mildly tart, mainly acetic with vinegar notes. Has a touch of cinnamon apple cider and a yogurt like sharpness. Some candied malt comes out as well. A bit simple and one dimensional. Although it doesn’t have the complexity of many Sour Ales it’s highly drinkable, and cider-like.

On tap @ Arctic Craft poured a hazy copper with a minimal off white head. Aromas of citrus, wood, light leather and lighjt barnyard. Palate was light bodied and crisp with a dry finish. Flavors of sour citrus, sour apple and light carmel with a crisp lingering tart finish.

Draught at brewery. Pours clear amber with an average, frothy, off-white head. Aroma is average malt (meal, straw), average hops (flowers, grass), average yeast (earth) with notes of wood and wine. Medium bodied, sticky texture, lively carbonation, and a bitter finish. Average duration, light sweetness, moderate acidity and bitterness. A decent offering from Arctic Craft as most of their brews are rather boring.
