A blend of five different apples hailing from Hill Country orchards and aged on a combination of French and American oak, resulting in a crisp, dry bubbly suitable for any occasion.

Secret Santa bottle, #316/624 from 30 Oct 2010. First beer of 2012, watching the ball drop on DVR after the last flight from DFW to DAY. This really was like an apple champagne. You get some tartness from the apples and the dryness of champagne. I also got a fair amount of the yeast too.

Corked bottle, 536 of 2076.
Pours cloudy light yellow/green like freshly squeezed lemon juice. Aroma is a symphony of apple, pear, and a touch of pineapple. Wow! Mouth-puckering sour barnyard lemon soaked with a wet leather horseblanket. AWESOME!!! Cider, or sour??? Holy moly, this stuff is awesome. Tingly on the tongue. I will be buying more of this later today.

bottle #308/624. almost white pour with a white head. nose is tart apples, sour, wood, and dry. smooth on the palate, very carbonated, sour apples, tart, funky, dry finish.

Thanks to mar for sharing this bottle. Pours a light grayish-yellow color with a white head. The aroma is full of very dry apples. The flavor is full of nice, tart apples with some oak notes. The cider is very dry. Medium mouthfeel and high carbonation.

Bottle number 346/624 (October 30, 2010 Batch) via a trade with blutt59. Pours with a very hazy and very pale body (wit bier like). Explosive and violent carbonation. Zombie like head that keeps coming back to life because of the extreme carbonation (odd). Strong carbonic bite at first. Sharp. Past that there are quite a few oak notes. Tannin, vanilla, coconut, cedar. Lots of fresh wood (medium to light toast). Slightly sharp apple flavor, crisp. Oak really dominates the aroma. Flavors are big, slightly sharp with good acidity. Again a strong carbonic bite. Strong oak notes, a hint of sulfur, raw oak, vanilla. Medium tannins. Slightly fuller body for a cider. Dry. Severely over carbonated. Slightly warming.

Bottle. Pours a hazy gold-white with a notable head. Nose is green apple, sharp cheese, and yeast. Incredibly dry, with complex notes of apple, spice, cheese, and an almost vegetal note (in a good way). Clean prickly finish. Incredibly good.
