Controlled yeast fermentation of extracted juice from mixed cider and eating apples. Carbonated.

500 mL bottle purchased at the Davis Food Co-Op. Aroma has some lightly tart apple aromas along with some mustiness present. A bit perfume-like. Some mineral notes are also there. Pours a transparent pale straw color with a lively bubbly white head that dissipates very quickly. Very prickly and carbonated to start. Some sweet hints are present in there, but there is also a good deal of mineral flavors as well. Of course, this is followed by apple flavor. There is an uneasy ethanolic harshness mid-late. Finishes with more apple. Medium dryness is accurate. I don’t know, this just doesn’t float my boat.

Bottle. Pours a pale golden color with a small white head and minimal lacing. Light sweet apple aroma. Flavor is sweet apple tartness with soft carbonation and a touch of honey. Light to medium body with a dry finish. A decent cider

50 cl bottle; BBE May 08. Very strongly attached crown cap. Light apple aromas with a touch of apple vinegar. Very pale golden color. Near medium body with fizzy carbonation. The flavor is slightly cooked apple with a touch of darkish apple skin. There’s also "fresh" apple juice. Good balance between sweet and dry. Finishes a tad tart. The sour seems to have been a passing phenomena. It is going very well with spicey food.

Bottle; My first cider rating so presumably quite naive.

Pours light yellow and highly carbonated with bubbles gushing from the bottom of the glass, somewhat sour/vinegary aroma with sweet apple highlights. The flavor provides the expected apples but not quite the sour I had anticipated from the aroma; instead a syrupy sugar atop a tart base that certainly...takes some getting used. Sparkling highly carbonated mouthfeel is almost light despite the sticky sweetness. This one leaves me eager to try the dry instead.

This is my first cider. 500ml bottle. Pours a clear yellow with light fizzy white head. Aroma is of apple and maybe a little yeasty. Flavor is tart, some citric lemon like qualities, and with a hint of sourness that seems just right. Finish is dry and fairly short. Man, I didn’t realize cider was this yummy. I think I’ll have to try others. Went back to the store and got another bottle already of this one.
