COMMERCIAL DESCRIPTION
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

22oz bottle. Golden color. This bottle has aged since it was made in 2008. 3 years? Nothing but the funk. All I smell is Brett. Basement and Attic. Some lemons, some spice, mostly musty blanket. Flavor has a light thirst-quenching tartness, some wheat malt. Very dry, to a Brut level. May have been aged too long. It is all Brett at this point.

On Tap at Rackhouse, Denver 16/09/2010 Sour aroma. Golden coloured and slightly hazy in appearance. Fruity and sour with a dry and yeasty finish.

Bomber purchased two years ago and now almost three years old ("bottled April 2008"). I read the really mixed reviews of this beer a couple years ago and decided to put it down for a while before trying. Pours a clear honey-gold hue with two fingers of fluffy white foam that reduces to a smaller pillow. Aroma certainly has brett notes but more of a "bright" nose than a "musty" one. Some specific aroma notes include lemon, flowers, stone fruit (apricot and peach come to mind), and horseblanket. Flavor is not as intense with brett as I might have thought and includes notes of caramel, honey, light spice, and dark fruits. There is some tartness in the mouth but it is not that strong. Light in body with a dry finish. To be honest, I find this neither particularly offensive nor as complex as I had expected / hoped. Readily drinkable, but just not very impressive. (532, 475)

A very different aroma of strawberries,dates, hay or grass, lemon-grass perhaps, maybe a bit of cilantro and ginger... this reminds me of Thai and Vietnamese food. Tastes of lemon peel, dates, light malt character, some kind of earthy warming spice such as clove or nutmeg. I almost feel like this brew is a little salty with a mild sweet and bitter finish. The mouth feel is a little watery, but the wateriness is balanced with fizz. The only thing i do not like about the mouth-feel is that you begin to get a syrupy feeling in your mouth, the kind you get when drinking soda made of corn syrup, which has a cheesy taste. A very different brew, but i like it due to being so unique. I initially did not think much of this beer, but i believe it becomes more interesting with every sip.

Bomber, brewed with Hibiscus, Figs, and White Pepper. Interesting. Pours a hazy golden/orange with a large uncontrollable white head which is very fluffy. The head quickly dissipates and leaves a bit of lacing. Smell is funky with hints of barnyard funk, citrus, spices, and an underlying malt sweetness. This one is a little light on the flavor, though there is a persistent yeast twang that sticks on your tongue long after the drink. I would consider this an entry to sour beer, it isn’t offensive or funky at all really. There are just hints of funk. The flavor has that classic funk but in a small dose, it isn’t too sour and there is some nice flavor form the white pepper. The hops can also be noticed here, something somewhat unusual for the style. The malt keeps the brett from wreaking havoc in this one it seems, the malt presence is high in this one. The mouthfeel is really carbonated which imo adds to the drinkability and accessibility of this wild ale. It is a decent ale, nothing too special but if you wanted to get someone into sours/funky/wild ales this is a great starting point. Serving type: bottle Reviewed on: 01-15-2010 03:52:33

It’s a tart, refreshing Saison-esque farmhouse ale.... it’s almost 10%. Not a single hint of booziness... just good. If you see one of these, get one...

Bottle pours orange-gold with a white head. Aroma shows notes of apricot, fig, bubblegum, and a grainy sweetness with a touch of funk. Flavor shows the same with additional notes of white pepper, hibiscus, and the brett coming through a little more than it did on the nose. Overall body is light to moderate, dry, and somewhat spicy.

UPDATED: NOV 6, 2011 Bottle. Golden orange in color with a medium sized white head. Maybe a touch cloudy with lively looking carbonation. Big brett presence in the aroma with a nice fruitiness. Slightly sweet flavor with a touch of pepper and spice towards the finish. The brett is also very apparent in the flavor. Very enjoyable dry finish. I had heard good things about this and it did not disappoint. More floral and dry than I remember.

22 oz bomber shared with friend. The brew pours a cloudy amber and produced a decent head which faded quickly leaving little lacing. Smells of brett and dried fruits. Tastes a little sweet and spicy due to the hibiscus and white pepper. Finishes somewhat bitter but not a pleasant bitter. The mission figs do add some fruitiness but either the figs or the hibiscus give this beer a off bitter finish on the palate.No noticeable hop bitterness or roasted malt flavors.

Cloudy gold beer, no real head. Immediately reminded of Deus - with an aromatic sweet water chesnut. This beer also has a sweet undertone and a sourish main. I fancy the sweetness is the hibiscus. Crisp palate and with spicy (white pepper) kick in the dry finish. Unusual.
