Pours hazy peach color with some small white rimming. Aroma is bretty and citric sour. Flavor is kind of mild with sweetness. A little bit of brett funkiness, but not as much as the nose would entail. Flavor is mild and body is light.

Backlog rating 3-20-2009 (Bottle - Bottled in April, 2008) This beer’s appearance is a medium sized white fizzy, frothy head with good retention, transparent body with a yellow hue, fizzy carbonation, and a good amount of lacing. The aromas are floral, spicy, fruity, sweet, and funky/farmhouse. The taste of this beer is funky/farmhouse, spicy, fruity and dry. The palate is smooth and this is a light-medium bodied beer. Overall, I did not enjoy this beer due to the funky/farmhouse taste and it is a beer that I will not drink again.

22 oz bottle shared by Drew. Thanks, dude! Pours a richly glowing golden orange hue, with frothy whitish head atop, laces ok overall. a good glow, mellow haziness. Aromas are cereal, coconut, oxidized and papery. Gentle brett, funk, and fruit. A kiss of honey, cereal, and doughy. Gentle rind, touches of brett, gentle funk. Bready, sweet, and a bit older. Initial is mellow bodied, thinned a bit with age. Some dryness, funk, and straw. Gentle doughy, some honey, crisp bready. A bit of sweetness, gentle warmth. Crisp, dry, quite drinkable in the end if a bit warm. Some oak, gentle sweetness, bit of citrus. Mellow honey, straw, grass, and clover a bit. Solid, aged, still well put together with mellow dryness, sweetness, fruit. Not bad.

This beer is doing great. Horse blanket is starting to peek out of the fruit and honey. Getting pretty dry too.

Bottle from Joseph Canals. Pour is a golden brown with large white head. Aromas of weird sour funk, nuts, sweet malts, and hops. Taste is bretty, apples, caramel toast, citrus. Light to medium carbonation with a silky mouth/finish.

A: Crystal clear and yellow, the beer begins teeming with effervescence and opens with a thick white head. The bubbles diminuendo to stillness, while the head exhibits staying power and coats the glass in white lacing. A very impressive appearance.
S: funk, brettanomyces, apples,
T: Subtle spices, apples, brettanomyces. There is a slighty astringent taste, with notes of rubber and ethanol. The beer has a sour character, but it is by no means puckering.
M: Pretty smooth drinking, in spite of some subtle off flavors.
D: An above average sour.

22 ounce bottle with gold foil into tulip glass, bottled in April 2008. Pours slightly cloudy golden amber color, with a nice 2-3 finger fairly dense white head with great retention, that reduces to a nice cap that lingers. Some nice and thick soapy lacing on the glass, with a fair amount of carbonation streaming up. Aromas of big tart apple, grape, pear, lemon, hay, grass, fig, bread, pepper, herbal, floral, funk, and yeast spices. Some fairly nice aromas, with good strength and complexity. Taste of big apple, grape, pepper, pear, grass, herbal, fig, clove, lemon, floral, bread, and yeast spices. Fairly dry on the finish; with lingering notes of pepper, lemon, bread, grape, grass, and yeast spices on the finish for a bit. Slight tartness on the finish, but not anywhere near what I was expecting from the aromas. Medium-high carbonation and medium body; with a fairly crisp and prickly mouthfeel that fits well. Alcohol is extremely well hidden with pretty much no warming present at all. Quite easy to drink, but is still a sipper. Overall this is a nice and quite enjoyable spiced wild ale. Good amount of flavor complexity and balance; and very smooth to drink. It held up well to age as expected.

Dull orange pour with some fluffy white head.. Nose is fruity, earthy, and funky - flavor is similar with a peppery finish. Not sure how this tasted fresh but it’s aged quite nicely!

Avery put together a crazy beer. The white pepper, hibiscus and brett gives this beer a unique aroma and taste. Aroma is citrus and spice. Taste is funk with spice and a lot of floral aftertaste. I don’t taste any of the figs that were added. This is a really unique beer.
