15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

Pours hazy peach color with some small white rimming. Aroma is bretty and citric sour. Flavor is kind of mild with sweetness. A little bit of brett funkiness, but not as much as the nose would entail. Flavor is mild and body is light.

Poured from bottle to glass. Hazy golden hue with fizzy white head. Aroma is straw, earthy, funk, barnyard, peppercorn. Mouthfeel is nice with a medium light body and zesty carbonation. Taste is dry throughout with a peppery finish. Overall this is a really nice brew.

Bottle. Yellow pour with white lacy head . Light fruit, sweet and light funk aromas. Apple, sweet and light tart tones .

Bottle pour. Sour apple aroma with other fruit. Bold peppercorn flavor with dark fruit. Finishes a little tart, but more spicy. Not too bad.

bottle. Golden with one finger head. This has held up well. There’s substantial Brett which is tart but not quite sour. Very nice fruitiness, especially pineapple. Much of the other flavors appear to have faded.

Poured from a 22 ounce bomber. First the bad, the brettanomyces strains are giving a musty character, reminiscent of sweety sock. Now the good, going beyond the must is ripe tropical fruits, mango, Papya, soft spicing that is cleared from my palate by the tartness. This is fairly sweet and malty. Tasty beer.

A decent malty sour beer. The sweet malty breadiness doesn’t completely conceal the sour funk.

UPDATED: DEC 2, 2013 Bottle: bottled in April 2008, enjoyed in July 2013. Over five years old. Cloudy golden body with a straw bottom; broken and chunky, off-white head is volatile and bubbles up nicely. Aroma is funk city. Wet hay, bubblegum, lightly tart pineapple, heavy bandaid, dank and musty funk, wet cellar floor type stuff. Touch of grassiness here and there... but the Brett has run rampant after five years in the bottle. Taste is similar; loaded with musty forest floor, sweaty horseblanket, clumpy yeast, damp wood, rotten pineapple, unabashed funk. Finishes with mild sweetness and Belgian spices; peppery, floral, grassy - possibly the hibiscus? This may have sucked in 2008, but time has treated it fairly well. Now it’s an old, funk Brett bomb... if that’s your thing.

Pours a slightly hazygolden with a medium white head. Aroma has nice bretty funk and a touch of hibiscus. Flavor has some fig but a bit of a band aid note...subtley spicey. Mouthfeel is light and silky with a dry bitter/band aidy/bretty finish.
