A soft pour produces a three-finger thick, frothy, off-white colored head that produces structural plateaus and leave a thick layer of lace as it slowly subsides. This is very well carbonated with madly streaming bubble swirling around in the clear, copper colored elixir. When held up to the light it shows a brilliantly clear, bright copper color. The aroma has an up front phenolic note that is a mix of Band-Aid, phenolic resin and musty, moldy leather. Underneath the phenolics there is a grassy grain character, a fruitiness reminiscent of pear and apple, some wood like spiciness as well as a touch of black pepper. Truthfully though it is hard to smell anything under the expressive phenolic notes it is not quite excessive though and is actually somewhat enjoyable if you like funk.p
Lightly sweet, with a bright fruitiness up front that reminds me of ripe pears, green apples and perhaps a touch of melon. The late middle and finish are dominated by phenolics Band-Aid and plastic are prominent and everything produces a sort of cotton mouth sensation on the palate. A certain, cured leather like flavor is here as well as is a bit of a peppery bite (up front from the carbonation and in the finish from fermentation & spice character). There is a light herbal note running throughout the flavor profile that becomes slightly noticeable after a bit and in fact seems to be contributed by the hibiscus. The phenolic notes seem to round out just a touch as the beer warms and as my palate becomes fatigued from the initial onslaught. Some hay-like and saltine-cracker malt notes become a bit more noticeable.p
Fairly light bodied, though it does have a touch of heft to it that lets you know this is a bigger beer. An interesting beer, the phenolics are a bit too much, but such is the danger of working with Brett. I think that this needs to be tried at warmer temperatures as the cold temperature it started out at seems to have accentuated the phenolic notes perhaps it is just that the other flavors are much more noticeable once it is warm. As phenolics do have a tendency to be reduced with time in funky beers, I will be curious to try this in another year.

22 ounce bottle with gold foil into tulip glass, bottled in April 2008. Pours slightly cloudy golden amber color, with a nice 2-3 finger fairly dense white head with great retention, that reduces to a nice cap that lingers. Some nice and thick soapy lacing on the glass, with a fair amount of carbonation streaming up. Aromas of big tart apple, grape, pear, lemon, hay, grass, fig, bread, pepper, herbal, floral, funk, and yeast spices. Some fairly nice aromas, with good strength and complexity. Taste of big apple, grape, pepper, pear, grass, herbal, fig, clove, lemon, floral, bread, and yeast spices. Fairly dry on the finish; with lingering notes of pepper, lemon, bread, grape, grass, and yeast spices on the finish for a bit. Slight tartness on the finish, but not anywhere near what I was expecting from the aromas. Medium-high carbonation and medium body; with a fairly crisp and prickly mouthfeel that fits well. Alcohol is extremely well hidden with pretty much no warming present at all. Quite easy to drink, but is still a sipper. Overall this is a nice and quite enjoyable spiced wild ale. Good amount of flavor complexity and balance; and very smooth to drink. It held up well to age as expected.

Dull orange pour with some fluffy white head.. Nose is fruity, earthy, and funky - flavor is similar with a peppery finish. Not sure how this tasted fresh but it’s aged quite nicely!

Avery put together a crazy beer. The white pepper, hibiscus and brett gives this beer a unique aroma and taste. Aroma is citrus and spice. Taste is funk with spice and a lot of floral aftertaste. I don’t taste any of the figs that were added. This is a really unique beer.

Bottle. Funky wet straw, lemon, spice aroma. Hazy yellow orange with a moderate fizzy head and some lacing. Sweet fruit, tart citrus, spice, and yeasty/funk flavor, soapy bitter finish. Light bodied, fairly carbonated.

Pours hazy peach color with some small white rimming. Aroma is bretty and citric sour. Flavor is kind of mild with sweetness. A little bit of brett funkiness, but not as much as the nose would entail. Flavor is mild and body is light.

Kinda funky in the nose, with honey and lemon, yeast and mild sweetness. Medium golden clear to hazy, with white lacing head. Medium watery body with heavy carbonation. Starts dry and mildly tart, funky with some lactic and citrus character. Bretty. Smooth. Very nice Belgian.

Draft at C AH. Pours an opaque golden tan color with little head and lacing. Nose is funky and fruity with yeasty ketones. First sip is nice pale malty flavors with yeast spicyness. finish is slightly brettish with nice lingering tones.

22oz in a giant frosty mug - pours golden caramel with moderate amount of white foam and noticeable lacing. Nose is spicy and fruity. Aroma is yeast, simple malts, pepper and fruit. Taste is sweet to the lips and finishes neutral (hence some hops). Body is medium and texture is thin and slick. This is probably the lightest Belgian Ale I’ve ever had. I could do without the pepper.
