COMMERCIAL DESCRIPTION
The hallmark of Belgian Triples are fruity esters balanced with a dry finish that fall in the range of 7-9% ABV. And for this year’s 19th anniversary celebratory brew, we decided to create a stylistically perfect beer—something unusual considering our penchant for producing eccentric beers that defy styles or categories.

In excited anticipation of 20 years and the new brewery, we concocted this very traditional, yeast driven, dry and fruity Tripel.

Hop Variety: Bravo, Czech Saaz
Malt Variety: Two-row barley, Wheat, Oats
Yeast Variety: Achouffe

Tap. Pours hazy yellow with a medium, fizzy white head, medium retention with good lacing. Aroma is earthy and barnyard yeast, cookie and biscuit malt with earthy hops and tropical fruity esters. Flavor is barnyard yeast, tropical fruity esters with light hops and a dry finish. Medium body and carbonation.

Deep color, lacked a long lasting head. Fruity aromas with a slightly less sweet taste than your typical Belgian.

Bomber and draft from Craft Ale House. Pours turbid morning urine yellow with minimal white head that fizzes and goes away quickly. Nose is rock sugary yeasty malt, hopcitrus, spice, lime. Tastes yeasty, bready malty, with an overall dryness, some fruit, spices, florals, and a high level of complexity.

Draft at iTap-Soulard, served in a chalice. Pours a hazy yellow-gold with a small white head. Aroma of citrus and tropical fruits, dried apricots, candi sugar, floral hops, cookies, and sweet bread. Flavor of floral hops, candi sugar, bready and caramel malts, mixed fruits, and yellow cake. A little straw and earthiness could fool me into thinking this was a big saison. Medium-bodied, with a sweet, fruity mouthfeel and moderate carbonation. Nice tripel.

bottled 4/12. pours a hazy gold with a lifeless appearance and no head. nice fruity bouquet with banana, pineapple, and floral hops. dry palate with a light to medium body. not much residual sweetness. banana notes with fruity yeast.

Bottle. Pours with a large and fizzy, rocky white head with a hazed yellow, particle filled body beneath. Aromas are estery, isoamyl acetate, alcohol, grainy, grassy, cardamom, peppery, spicy phenolics. Light pear esters. Flavors are bready and grainy with mild esters and stronger phenols. Alcohol. Somewhat strong bitterness in the finish. A touch of salinity. Lively bubbles, dry, medium bodied, warming.

22oz bottle from Binny’s Lincoln Park. Pours a cloudy, bright golden-orange colored body with a finger-width, frothy, white head that dissipates quickly and leaves a moderate lacing. Aroma is big doughy Belgian yeast, pale malts, a light herbal hopping, some banana esters, and a light clove phenol. A light pear and orange fruitiness. Flavor is similar. Big doughy Belgian yeast up front with a bready pale malt backing. Some lemon and orange citruses with a nice pear as well as a light clove spice and banana ester in the middle. Herbal hopping gives this a medium-light bitterness and helps it dry pretty nicely. Finishes with lots of doughy yeast, clove, and a bit of a zesty lemon citrus. Lengthy aftertaste following a medium body and a medium-light carbonation with just a slight alcohol warmth. Overall, a decent tripel. Lots of doughy yeast, a pleasant dry herbal hopping, some clove and banana, and a light fruity zestiness. Nice beer.
