Aged for eighteen months in fresh Cabernet Sauvignon wine barrels, Dihos Dactylion features a primary fermentation using a proprietary blend of saison yeasts, a secondary fermentation of our house brettanomyces wild yeast strain, along with lactobacillus and pediococcus bacteria added to sour things up. Dihos Dactylion bursts with aggressive aromas of red wine and a touch of brett; delightfully sour to the taste, initial lactic acid flavors hit high in the cheekbones before transitioning to complex layers of soft fruit, oaky-tannins and red wine.

Unclear medium red - orange amber color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, tart, cherry, wood, sour apples - grapes. Flavour is moderate to light heavy sweet and light to moderate acidic with a long duration, tart, dry, tart berries - cheeries, grapes - wine. Body is medium, texture is oily to watery, carbonation is soft to flat. [20140808]

Appearance: Hazy brown colour with an almost non-existing head.
Aroma: Sour, caramel, floral, vinous, dried fruit.
Body: Medium body and carboantion.

Bottle split at Mother Kelly’s during RBESG ’14, day 2, 08/08/14 - a massive win from the Kernel Rot Box! Murky orange amber with a moderate off white head that dissipates to edgeing. Nose carries a great lactic soured fruit burst to it, earthy, pumpkin seeds, tarte peach, woody vibes. Taste comprises vinous notes, oaky, bottom of the tin left for a week pineapple chunks, light acidity, mellow dank fruity overtures, tarte peach, tannins. Medium bodied, fine carbonation, lightly warming alcohol in the close. Winner!

Sampled from bottle. Unclear reddish color, small beige head. Aroma is sour, r fruits, green apple. Taste sour, sour green apple, sour red berries, sour fruits. Looks like a lot of sour which it has, but also some fruitiness. Quite nice imo.

Bottle during RBESG 2014. Hazy/cloudy orange/brown beer with a small offwhite head. Sourish rubber aroma, grapes, hay, floral, vinous, woodsy, caramel, raisins, sourish, vinegar, sweetish notes, some figs. Sourish woody flavor, hay, vinous, raisins, figs, caramel, vinegar, rubber, funky, tart notes, some grapes and rubber notes. Amazing.

Bottle shared during RBESG 2014 - big thanks to Kernel rotbox. Pours clear amber with a creamy white head. Big booze-soaked berries, wood, bread. Medium sweet flavor with acetic berry burn, alcohol, old wood, raspberry. Full bodied with fine, spritzy carbonation. Warming finish with more acetic burn, ripe berries, sweat. Punchy stuff.

Bottle thanks to Toby. It pours hazy orange-amber with minimal head. The nose is funky, juicy, red wine, acidity, jam, balsamic, strawberry and more tang. The taste is bitter, sweet, tart, tangy, red grape, tangy, vinous, sherbet, strawberry, jammy, some acidity, wood and some alcohol with a dry, fruity finish. Medium body and moderate carbonation. Very nice. Good depth.

36cl, recently retired exclusive American brew, with Brettanomyces, thx alot to Jacob for bringing this over!, very complex sour brew, vinous/woody/fruity and slightly alcoholic, not too heavy, balanced, clear, nearly no head, very good brew, yet very expensive!

bottle. hazed almost purple body with a lasting small bubble head. yep, this is gonna have some pucker factor to it. sour cherry is my 1st thought, some banana in the finish. like a tart grape with strawberry. man, almost feel it in the cheekbones then it fades. banana really gets stronger as this warms. sour cherry banana juice in a good way. a bit too sweet, but i like it.
