COMMERCIAL DESCRIPTION
Aged for eighteen months in fresh Cabernet Sauvignon wine barrels, Dihos Dactylion features a primary fermentation using a proprietary blend of saison yeasts, a secondary fermentation of our house brettanomyces wild yeast strain, along with lactobacillus and pediococcus bacteria added to sour things up. Dihos Dactylion bursts with aggressive aromas of red wine and a touch of brett; delightfully sour to the taste, initial lactic acid flavors hit high in the cheekbones before transitioning to complex layers of soft fruit, oaky-tannins and red wine.

Drunk to celebrate my rating number 23,600. Bottled. A dark amber beer with a thin beige head. The aroma has notes of brettanomyces, caramel, malt, and wood. The flavor is sweet with notes of wood, brettanomyces, malt, caramel, and wine, leading to a lightly tart finish.

Hazy darkish amber beer, tiny off white head. Crisp palate, a little dry. About as sour a beer as I can still enjoy. Vinegary lemon juice and tart fruits. Trace of woody red wine keeps things interesting.

A: The beer pours amber in color with a medium sized khaki head. S: Starts off with a nice lactic tartness and perhaps just a touch of vinegar. A little bit of a sour cherry aroma and some nice wine and oak aromas. In fact, there’s quite a heavy cabernet note to this beer. T: Lots and lots of wine flavor with a solid oak quality, including some mild tannins. A mild fruitiness which consists primarily of cherries and grapes, perhaps a little bit of red berries, too. M: Medium in both body and carbonation. O: Good beer from Avery. Pleasant to drink and surprisingly easy to do so, despite a rather high ABV.

Bottle. Poured a hazy reddish brown color with an average fizzy off-white head that mostly lasted with good lacing. Moderate to heavy sour tart grape aroma. Medium to full body with a tingly texture and soft carbonation. Medium to heavy sour & tart flavor with a medium to heavy sweet & tart finish of moderate to long duration. This is a very good beer.
