Our Boulder Weisse echoes the traditional flavor profile while adding a few Avery twists to the brewing method. This inaugural batch was aged in oak barrels for six months with a rustic Brettanomyces yeast strain and finished at 5% ABV. We present our homage in a customary goblet with your choice of a handmade syrup from fruit typically grown in Colorado - peach and cherry.

On tap at brewery. Aroma is full of wheat with a light citrus and moderate lactic aroma. Light fruitiness and some barnyard funk. Pours a pale, cloudy straw yellow with a medium thick white head with average retention and moderate lacing. Flavor is very wheat forward with a light lactic acidity. Faint funkiness a with some nice tropical fruit and citrus notes. Low but present bitterness. Mouthfeel is light bodied but very silky and soft with medium carbonation. Low astringency and low alcohol warmth. Overall a really nice Berliner with a bit less acidity than some of the others out there. A nice way to start my trip to Denver.

Tap house special at Avery's. Light yellow pour with a thin white head. A really sour smell, very pungent. The taste is very mild but a lot of sour flavor present. Overall not one of my favorite sours, not strong enough.

For the style, it was well done. Sour notes with wheat. Cloudy yellow gold color with a white head. Smooth mouthfeel with a pucker factor. Moderate carbonation. It’s hard for me to differentiate this from sours. The wheat component sets it apart. Refreshing but not an everyday beer. Sour and grainy flavors. Little to no hops presence.

On tap @ Avery. Pale straw pour with a small white head. Lemon zest, straw, and light acetic aromas. Straw and musty funk aroma. Flavor is sour lemon juice and a hint of vinegar. Light malt, straw, and some musty funk. A little too acetic, but otherwise nice.

Draught at Avery, September 8, 2013. Indicated to be tap room only. Yellow of course. Sour, acidic aroma. Sour flavor with wheat, and sour flavor as well. Crisp, acidic finish with wheat. I had this without syrup.

I had this in the taproom in a 10oz pour. It was hazy, straw yellow color with little to no head. It was tart and citrusy. It was suggested to add peach syrup, which gave the beer a different twist bit subtle enough to keep the flavors. ---Rated via Beer Buddy for iPhone
