COMMERCIAL DESCRIPTION
Our Boulder Weisse echoes the traditional flavor profile while adding a few Avery twists to the brewing method. This inaugural batch was aged in oak barrels for six months with a rustic Brettanomyces yeast strain and finished at 5% ABV. We present our homage in a customary goblet with your choice of a handmade syrup from fruit typically grown in Colorado - peach and cherry.

draft. strong lactic acid and raw wheat nose turning more to milk and yogurt as it opens up. prickly and lively acid, medium-high effervescence. sour unflavored greek yogurt. delivers the lactic acid well with a dried hay malt quality, but it’s a bit rough and coarse, as expected of Avery.

Hazy straw yellow color, white head. Funky, acidic, lemon taste. Spritzy mouthfeel, low bitterness. Acidic aftertaste. Acidic scent. This is very much reminding me of a friendly gueuze or lambic.
