Bottle. 12 oz. Split with James at Belgian. Pour is chesnut haze brown with a thin white head. Aroma of wild yeast, funk, tart cherries, oak, merlot grapes, chocolate, barley, and subtle notes of roast. Medium bodied with a tight, tart, sticky palate. Awesome.

Bottle, thanks Matt. Pours dark brown, with a light brown head. Aroma is brett, red wine, and fruit. Flavor is fruit, wine, oak, brett, and malt. Medium body.

UPDATED: JUL 20, 2010 Bottled on Feb 10, 2009. Fermented with 2 different types of Brett. Pours a deep brown color. Really not the color I was expecting but ok. The aroma is funky brett and dark fruit. The initial taste is ok with notes of grape and the brett. The ending for me is not that good. It has a bitterness to it that I don’t like, almost like there was too much hops added.
Re-Rate: For sure pick up notes of from the Zin barrels in the nose. Slightly sour with the funk following. I actually don’t mind the ending anymore. It’s totally funky but decent.

Bottle from Craft Ale House. Thanks to Brian the bartender for spotty the case at Shangy’s. Pours dark brown with a medium white head. Lacto and brett huge in the nose. First sip is mild vinegar but malty brown flavors enter quickly with some. The middle flavors are middle dried fruits, oaky and light acidic with a vinous finish. Really great stuff! Glad I bought for a few extra for the cellar.

Pours deep brown with off white head, aroma is big wine, vinegar, funk, and some more sour acetic notes. Taste is not as good as the aroma, with some sweet grape taste leading into funk, barnyard, and some bitterness that finishes very dry. Great sour, balanced and not over the top, but very nice. This would be great to age if it was bottle conditioned!

Dark copper pour with a thin beige head. Aroma is quite lactic with a healthy dose of brettanomyces. Unfortunately the aroma lead me to believe this was going to be sour, but it was lightly tart at best. Light vinegar, cherries and brett. I cant wait until the barrels at avery start to get more sour

Creamy tan head and deep amber body. The aroma promises a lot that the beer doesn’t deliver. A little bit sweeter than sour that I was expecting. Has a great mouth feel and interesting carbonation. Nice cherry fruity. A littler more barnyard would be nice.

12oz bottle poured into a tulip.
Pours very dark mahogany with a thick but rocky beige head that’s fed by a steady stream of bubbles throughout. It stays on as a thick cap and leaves great lacing.
Aroma is lightly funky but with dark cherries and brown sugar. I can definitely get the zinfandel with grapes and spiciness from the barrel.
The taste is much, much wilder with the brett dominating up front with some vinegar as well. The grapes are present but the brown sugar and fruit take some time to come out. The finish is very dry and vinous with an alcohol burn.
The mouthfeel is medium to full bodied with strong carbonation and, as mentioned earlier, it takes on a very wine-like character in the finish.
This is a solid wild ale that took a while to open up for me. The brett dominated too much at the outset but as it warmed the sweetness and complexity from the nose started to come out in the taste. Love to see these types of beers from Avery though.
