Very satisfied with the results of this collaboration. Pours a deep brown with little head. Strong fruit and malt aromas. Flavors of sugar, plums, spices and malts shine through the most. Pours a clear dark honeyed brown into a tulip glass. A fine, persistent off-white head two finger high forms immediately despite a careful pour. Copious amounts of bubbles rise through the brew. The aroma has that brown sugar, yeast and spice (cinnamon?) character I associate with Belgian ales. Mouthfeel is smooth, almost creamy. Flavors explode out of this one! Big and malty with a black pepper bite. Serious astringency and alcohol bite round this one out before a lingering yeast and black pepper finish. Flavor is dried fruit, mustiness, funkiness, some delicate spicing: ginger, thyme. A palatable belgian strong ale. Subtle aroma - light sweet caramel malt, a whiff of bret funk, nice spice and yeast - as it warms a very nice true Belgian aroma, nice "wild" character. I can see the "Pere Jacques" comparison - this one might be better than the PJ bottle I rated - like the aroma, but a little more floral hop and peppery character, nice balance between light farmhouse funk and sweet spicy caramel malt. Average slick body, light carbonation, quick finish but a nice lightly spicy linger - very nice, and a little age set well with it - well done, Avery - see? avoid the booze monsters and you can do good work. It kind of reminds me of Unibroue’s Trois Pistoles, or maybe a Goose Island Pere’ Jaques. These are all damn good Belgian style brews full of a caramelish-dark brown sugar-like taste Reminds me of a port wine with dark fruits, some chocolate and other roasted malts in there, but for sure belgain candy sugar ( beet sugar) and caramalized malts and belgian yeast. Not a lot of strong estery flavors here ( i.e., not a strong bubble-gum taste like in a lot of Hefeweizens) A very good Brew. Murky brown with a finger width of clinging off-white head. Cocoa and caramel aromas. Mild fruit and doughy yeast. Aplles and musty earth. Mild chocolate nose. Full bodied and bitter. Malt sweetness accented by a bitter acidity. Caramel flavors. Tart citrus effervescence. Sweet malt backbone. The second glass holds the dregs and makes for a more murky hue. More clinging head. Toasty with tea-like notes. Cocoa and slightly burnt. Two beers or two blended recipes? Not quite blended. Syrupy with a mild well hidden burn. Good stuff.
