COMMERCIAL DESCRIPTION
This third iteration of Eremita is strong and dark with rich malt complexity, an earthy yeast profile, and mouth-puckering sour bite. A sultry blend from twelve Cabernet Sauvignon barrels, Eremita III is comprised of ales from five different creations in the Avery Barrel Aging Cellar. Ranging from a blonde saison to a black saison to a strong Belgian amber ale, they spent between 9 months to over 3 years in their respective barrels. Eremita III is a sour ale without the training wheels.

On draft at Avery. Very sour, winey, and complex. Red wine, grains, and port. Made from a blend of 5 ales aged in Cabernet barrels. Sourheads will probably love it.

(Draught) Pours a slightly reddish brown body with a small beige head. Aroma of cabernet, cherry, brett, citrus, and caramel. Flavor of cherry, caramel, pedio, cabernet, some citrus, and wild berries with a dry finish.

Tap at 3rd Annual Boulder SourFest (06-02-2012). Tasted this side-by-side with I and II. Poured a dark brown with a small off-white head. Smell is muscat, oak, tannin, light funk, toffee, and cherries. Taste is sour grape, light funk, wood, with a lingering sour and dry finish. Medium body with soft carbonation. Really sour beer and although very different from Eremita II, a tie overall in the series. Mouth-puckering deliciousness.

Tap. Pours hazy dark brown with thin, fizzy off-white head; short retention and spare lacing. Aroma is figs, black cherries, leather, caramel malt, earthy hops, and oak. Flavor is heavy sour fruit with supporting sweet malt and faint hops; red wine notes throughout with a dry, tart finish. Medium body and carbonation with medium/high warmth.

Nice tart punch with sweet taste. Very carbonated and pleasant mouthfeel. Pours a ruby amber hue with little head. Delicious.

Dark brownish black with a thin beige head. Lovely aroma of not-too-sharp white wine and oak barrels, along with some delightful "Belgianness" of sour raisins, rusty earthy dark toffee tones, and wine. Flavor is plenty sour, would probably be puckering if my palate wasn’t used to it. By as it is, I found it playful yet assertive. Very full flavor of sour citrus, some Cabernet, some light oak tones, dark Belgian yeast tones, and some earthy sweetness following through and rounding out the sourness.

Tap at Avery. Pours dark brown with a medium, fizzy light tan head, medium retention with light lacing. Aroma is acetic vinegar and dark fruits of figs and cherries with light caramel malt, toast and light hops. Flavor is light malt, dark acetic fruits and a dry finish. Medium body, warmth and carbonation.

Pour on tap at the brewery, dark brownish red pour with thin to no white head, aroma brought notes of big vinous and oak characters, some slight vinegar notes with hints of dark fruits, caramel and toffee as well as some slight vanilla in there, some lemon from the lacto as well. Taste is a fairly sweet but still sour mix of red grapes, dark fruits, caramel and toffee, hints of a vinegar with some oak character, finishing fairly sour. Decent for sure.
