Aroma is sour yeast and sweet malts. Notes of dark fruit, pepper, fig, and some other spices stand out. On the palate, it is surprisingly chewy. The flavor brings out a bit of a banana character. It finshes dry and a bit sour. This beer was very interesting to say the least. It has almost a wine type flavor and is pretty complex. With that said, I am not a huge fan. Bottled April 2008, taste here in late October 2009, so been sitting on this for a year and a half. Dusty, yeasty nose, a little pale malt, big pepper and floral notes, dry with tart fruit. Clear but deep golden body with strong carbonation and a sudsy meringue laid right on top - frothy, creamy and lacing, sort of reminds of old shaving cream or fire extinguisher exhaust. Taste is very dry and peppery, wood and cracked leather, black pepper and very very dry malt. Alcohol is well-integrated but there’s a mild tongue numbing all over. Yeast has some mild lambic tartness, not really sour, but sort of has the laminal caress of a rubber glove. Very full, very smooth body, a unique sort of funk. The aroma was an enticing blend of sweet apricot and pear. The flavor was dry, tart and funky with undertones of pear and apricot and touches of vague spices. The finish was long, tart, sour and dry. Aroma of mixed tart fruits, yeast, spice, and light brett. Taste is similar, with the spice taking over, brett being barely detectable. Malt backing is solid. Overall, a fair brew. I appreciate the experimental natrue of the brew, but would not seek this out.
