Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

On tap at the Trappist. Very nice, mellow Belgian ale. You can taste the light barnyard funk in the background from the brettanomyces, but instead of a sour flavor this ale has a nice, light sweet flavor going on. Pours cloudy golden with white head. I would recommend this to anyone who wants to start getting into sours.

22oz bottle thanks to toncatcher for this wantlist extra..... pours a slightly hazy apple juice brown.... nose of sweet pineapple, citrus fruits, apple juice, and lightly spiced.... slightly tart flavors up front then some grass and yeast come into play, somewhat bready. lightly carbonated. flavors were held back and it really didn’t do much for me overall.

On tap at Blind Tiger. Pours a light orange with no head. Aroma of sour fruits, citrus, and oak. Flavor of citrus (orange specifically), banana, light melon, slight tartness, oak. Fruity-ish and sweet, kind of like Russian River sours but sweeter (and not as good...) Weird sourness but certainly drinkable. Interesting wild ale, to say the least. But I did enjoy it. Should age well too.

Well, a wild ale is a good description of this below-average saison. The horse smell was an impediment to enjoyment. It is however easy drinking and there is some mild spice in the aroma. Bottled in April - I cannot say in two years the aroma will dissipitate, bit perhaps the taste will be more interesting.

Appearance: clear copper, wispy off white head, sudsy bits of lace
Aroma: leathery aroma with musty cobweb character, touch of caramel sweetness, grassyness
Flavor: lightly sweet caramel malt flavor, touch of spicyness, light bret adds complexity with a nice mustyness, light balancing bitterness, funk grows as the bottle warms and balances out the base caramel malt
Overall: the bret is young and will develop over time as it eats through the remaining sweetness

Aroma: sweetness in the aroma is fading as the bret grabs control and blooms, no grassy character
Flavor: caramel sweetness is gone from the flavor as well, funk has grown nicely, musty funk is still well restrained and balanced with the base malt
Overall: goes well with cheese

too fruity. Poured a light golden hue with a white head that seemed to have decent lacing. Aroma was somewhat grassy but had some weird fruit notes No real flower or pepper notes at all, just fruit. Figs just don’t work with beer.

marjetsquare liquor tallahassee, poured a cloudy light orange. aroma is funky, fruit spices and dirt. taste is yeast, fruit jam, pepper, oranges. best drank cold, as it warmed it became very peppery and even more funky, hiding the fruit.

Pours pale gold with a fizzy white head. Aromas of bread, funky cheese, and more bread. I’m trying to keep an open mind. Wow, interesting flavor: lots of tartness and an assertive yeast flavor. Not getting much of the fig or hibiscus but hints of pepper are apparent as is something that may be hazelnut. A bit of copper toward the end. Medium body and a long dry finish that reminds me of Orval. Hmmm . . .
