Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Peace to all and follow your dreams! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

Bottle... Cloudy golden ale with a small, fizzy, white head. The funky, acidic nose imparts notes of pale grains, lemon and cheese. Full-bodied with fizzy carbonation. Good bitterness and funkiness. Grainy and citrusy (lemon peel). Funky, minerally, moderately bitter finish.

Tallahassee, Fl. - Market Square Liquors - 22 oz bomber. Bright orange, slightly murky, with a faint white head. Yeasty aroma with some grape accents. Flavor reminds me of muscadine grapes and has some raisins, pomegranates and a large dollop of yeast. An odd cobination and not the most refreshing saison I have consumed. Mouthfeel is thick and rich - a plus for this one. Overall, needs work.

22 oz bomber from Wine King. Pours a hazy orange with a medium size bright white foamy head. Aroma has lots yeast, some dill pickels, olives and then a nice segway into more of a floral funky aroma. Medium bodied with a very dry finish and lively carbonation. Flavor is much like the aroma with floral funkiness and slight fruity funkiness. I have to go against the grain on this one and say I enjoyed it and think it’s very underrated.

Light, sweet, fruity aroma with vanilla and definite bubblegum. Some unpleasant floral aromas - distinctive narcissus/paperwhites. Mostly clear medium gold, good label and bottle, thin white coating head. Tangy, moderately bitter, metallic on the lips, very slightly briny. Thin body, slightly warming green plum aftertaste, disappointing mouthfeel -- needs to have been made with harder water. It’s great that they’re experimenting, but experimentation isn’t the goal -- back to the lab. MSL, Killearn.

Tap at Capone’s. Pour was a cloudy light golden/straw color with a tiny white head. Aroma of some lemon zest and some strange floral aromas. Taste is of some citrus, a bit of sour funk, some interesting floral flavors and some other earthy/spice notes. Definitely interesting

Draft: hazy golden color, funky aroma - really smelled like a stank barn, taste is sour but not overwhelmingly so. I thought this was pretty good. I have a bottle here that I hope I can age a bit.

Once in a while, a beer comes along with an outrageous premise. Avery fifteen, with its use of figs, white pepper, hibiscus flowers, and 100% brettanomyces fermentation appears to be one such beer. I chose to pour it into a Duvel tulip, which it graced with clear, golden body, and a one to two finger thick head that faded over time. The smell was a mix of fruits like granny smith apples, papaya and cantaloupe, floral and herbal vegetable matter, and a milder than anticipated, but ever present funk. The taste was balanced between sour-tart and spicy-sweet. The pepper showed up only in the finish.I never did detect any fig. The mouthfeel was drying and refreshing. If I had not been told about the brewing with pure brett, I would never have guessed it. Not as wild as I have had before, but tasty nonetheless.
