Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

Draft: Poured a orange amber color with not much head. The aroma was spices, fruit, banana, and a touch of yeast. The flavor was great, sweet and easy to drink. It had a fruity yeasty taste. I’d love to try this after letting the funk take over a bit more. Overall, a decent brew.

Tall white soapy head that seems to last quite some time. Had a really odd scent when I first opened it. I hadn’t realized it was a Belgian Very bandaid-y when poured into a glass, which carries through to the flavor. Honestly, this stuff is pretty nasty. I’ve learned to appreciate the unique properties of the wild side in Belgian beers (brett, pedo, etc.), but I’m not liking this one at all. I’m thinking the hibiscus flowers and white pepper are what’s killing this one for me. Just way too many unique flavors thrown into a blender to see what will happen. The yeast is very flocculant as it poured extremely clear. So much that I thought it was filtered. However, when checking the bottom of the bottle there’s lots of sediment.

Draught at TDR Ex: Sweet aroma. Smells of spices, coriander, flowers, hibiscus, and Brett yeast. Poured golden/yellow/straw/flax in color with a medium-sized white head that diminished. Flavor was medium sweet. Tastes of alcohol, spices, coriander, bubblegum, Brett, and pepper. Medium body. Chalky texture. Average carbonation. Sweet, spiced Brett finish. Some alcohol burn.

Bottle from South Bay Drugs and Liquor. There is a delicate nose of light spices and smell of Belgian yeast with true authenticity. Appears as a glowing straw blonde with a thin layer of fine heading. The flavor is heavily spiced with signs of pepper and coriander but also possesses a soapy flavor that rubs me the wrong way. There are some pleasant points in the drink of this beer but I do find some flaws in the initial aftertaste that ruin this from being a great anniversary offering.

50cl bottle from Kingdom Liquors. Pours a orange-golden color with a one finger white head. Reasonable head retention. Aroma is unique: Smells of spice (especially pepper), wet dog, over-ripe citrus. Flavor is also unique: hints of straw, wet hay, warm yogurt, nutmeg, spice. Light to medium-bodied with a slightly citrusy-watery finish.

Bottle courtesy Gillard. Pours a hazy golden with a small white head. The aroma is reminiscent of a perm salon mixed with a leather shop that has a lot of sweet tarts. This is one of the strangest beers I have ever smelled. The taste is the same as the aroma. Medium thin mouthfeel with a mild amount of bitterness. This beer is strange. I’m going to have to cellar this one to see if it improves with age.

Clear dark gold with a wispy white head. Seriously strong cheesy, moldy barnyard piss aroma reminds me of the breeze from the dairy farm i once lived across the river from in Snoqualmie, Wa. Medium body and softly carbonated. Main flavors are earthy, dusty pale malts with cheesy funk, and a taste of of citrusy lemon which adds some tartness. The biggest barnyard aroma i’ve come across in a long time. Good stuff !

A: Aromas of tart cherries and granny smith apples with a sweet backing scent is the immediate impression. Bretty but not overwhelmingly so. As the glass warms, the brett character gets a little funky and more herbaceous aromas are present. A: Pours a beautiful deep gold/copper with white bubbles dotting the surface of the beer. Aggressive pour yields a substantial inch plus of foam. F: Chilled, the corky brett with some subtle combinations of summer fruit and light spice were dominant. As the glass warmed the malt began to assert itself & beer became a bit sweeter...It retained much of the light bite but added more herbal and floral elements (I guess attributable to the hibiscus) that were more in the realm of savory than sweet. The finish was suitably dry with a nice spritzy & spicy close. O: If you are looking for the figs & white pepper, you’re going to be scratching your head because for the most part the influence of these ingredients seems very subtle at best. It definitely hits the farmhouse/saison vibe & provides some new & interesting flavor combinations that leave you trying to put a finger on exactly what you are tasting.
