Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Peace to all and follow your dreams! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

The pour produces a hazy gold colour with a sudsy off-white head. The nose has ample funk, sugary sweet malts, sweat, dirt, peppery spice and some wet hay. It is certainly musky and has an underlying apricot-jam aroma. The flavour is absolutely filthy, with wild yeast hitting you right away, later moving toward an even muskier and sweatier finish, that is crisp and short. There are flavours of citrus, wheat, banana/clove, peppery spice and FIG. The palate is thin, sharp and very dry in the finish. Different and nice, but a little weak. The finish is a little metallic, but it’s far more funky and dirty.

deep murky orange color with a 1 finger white head. very sour/tart fruity nose. good thickness but the sour/tartness doesn’t continue until the finish. some age should do this beer a lot of justice.

On tap pours a cloudy amber color with a white head. Has that funky leather smell I am getting accustomed to smelling when a beer is brewed with bret. Has a medium mouthfeel. Taste is straight bret, spicy, leathery, musty. Just what I would expect from this brew. Bret lovers only need apply.

22oz bottle served in a Duvel tulip. Poured a pale gold with a big bubbled head. Nice sour aroma with some apple and a little sugar. Fairly light body. Plenty of carbonation, spritzy mouthfeel. Flavor is a little lacking, some sweetness, a little more fruit. The Brett comes out in the finish. I didn’t get the figs. This one might need a little more time to mature and gain some more sourness.

Pours cloudy yellow, without much head. Aroma is wonderfully complex with wood (hickory, maple), and banana scents. Flavor is pretty sour malt with some dark fruit flavors, and burnt wood finish. Mouthfeel is medium and finish is pucker sour, but kinda in a rotten good way.

On draft at O’Brien’s. Appearance is translucent light orange hue, thing layer of white foamy head, moderate lacing on the glass. Smell is funky bret, musty horseblanket, tart and sour fruits. Taste is dominated by the farmhouse fun and sourness, opens up to light fruits (pears and apples), slight chalk, light tartness, finishes with alcohol warming and sweet fruit syrup. Medium-bodied, thick and oily texture, highly carbonated. Depending on whether you are a fan of this style, carbonation is overdone, but a good solid example of a wild ale that is best in small quantities.

Pours a slightly hazed highly effervesent pale gold with 1 finger creamy white head that has great retention. Aroma is moldy hay, wet limestone, crab apple, raw yeast, dandelion leaf and an underlying sweetness that just can’t cut through the funk. Flavor is tart and earthy up front, date nut bread sweetness, hints of sweet dark fruits, sweet amish frienship bread funk, mushroom, light wood notes, walnut skin bitter. Finish is light basement funk and a sort of straw sweetness and toast. Body is medium thin and sort of sticky.

Quite tasty and unique...love the souring of the brett (a flavor I am beginning to appreciate). Honey gold in color with a 1/4 inch tight white head. The aroma is filled with citrus, pepper, and funk. The tartness is a refreshing addition to summer.
