Commercial Description:
15 years of brewing! You know what’s been the best part lately? Tons of experimentation! For the last couple of years, we’ve been working with several strains of brettanomyces (wild yeast). We found one and deemed it the best for it’s tart flavor and funky, fruity aroma. Adding black mission figs for a subtle jammy aspect, hibiscus flowers for an herbal bouquet and hazy sunset hue, and white pepper for a bit of spicy twang, we’ve created FIFTEEN - a unique drinking experience inspired by the wild farmhouse ales of Belgium. Though immensely complex today, more flavor will emerge with time, so throw a few bottles in your cellar for future celebrations. Thanks to all of you who have made our 15-year ride possible! Peace to all and follow your dreams! Brewed with Rocky Mountain water, malted barley, malted wheat, hops, black mission figs, hibiscus flowers, white pepper, and a very unique strain of brettanomyces yeast.

Thanks to Mar for giving me this over a year ago! I let this age a bit in hopes that it would dry out. Aroma still has some of that sweaty socks quality, which is unfortunate, but there’s also pepper, flowers, cheese, squash, and a bit of alcohol. Eh. Tastes of hay, biscuits, sourdough, sweaty socks, sharp cheddar, rotten fruit, pepper, and its sweeter than any "brett-beer" should be. Finish stands out with a lot of grass, sourdough bread crust, earthy hops, and an odd fruitiness. Cheese is still there, but the finish dries things out nicely. Medium bodied, high carbonation, mostly creamy body, and noticable alcohol heat. This is still a pretty fucked up concoction, but it did improve and dry a little with time. You still have some? Keep aging it!!!!

Slight spice and citrus aroma. Light amber color with a little white head. Good taste of fruit and honey, but dry/alcohol tasting finish.

Bottle giddily shared by hellbilly -- thanks! Pours golden in color with a white head of foam. Smells of assorted condiments and berries -- almost like Hommage, actually. Tastes strange: green peppers, bile, flowers, and mixed peppercorns. Unsure how I feel about this one.

Bottle:   Dirty straw, very dark, very orange, sudsy off-white head, dies immediately, no lacing.   This one appears still.   Soft Bretty nose, slightly barnish, otherwise some straw/grassh/hay as well as a bit mealy.   Somewhat Saison like on the tongue, remains mealy.   Bright to start, but at the back it becomes somewhat dull.   A little citrusy.   Body and mouthfeel are moderate.   Finish is slightly floral, peppery, but also mealy.   Not quite like those in Belgium, but not bad either.

It tastes and smells so unique from the combo of sweetness and white pepper. It has a perfect cloudy dark lemon saison color. The white pepper is the only thing I don’t enjoy on the palate, but the figs and hibiscus are subtle and delicious.

22oz bottle, dated april 2008, via secret santa trade. thanks! pours a bright, yellow-gold with a full, bubbly white head and great lacing. aroma is surprisingly nice with notes of tart citrus, banana, green apple, brett funk, wheat grass, and mild barnyard with subtle, sweet, candy sugar, berry, and floral notes with hints of spicy, white pepper. flavor is, note quite a nice as the aroma but is solid as well with dry, mildly tart citrus notes up front with fruity notes of apple, pear, and sour plum with a touch of funk, cedar, and sweet yeasty malts on the finish. i definitely picked up a bit of the hibiscus flower sweetness but none of the figs. palate is medium bodied and bubbly with a lingering, dry finish. overall, an underrated brew that is seemingly hitting its stride after a bit of aging.

Bottle. Nutmeg, lemon/orange, and sour milk malt aroma. Orange-yellow color with minimal head. Spicy orange and dry hay flavor. Slightly bitter finish. Nice saison-like beer.
