COMMERCIAL DESCRIPTION
Preachiní To The Choir is an experiment in yeast. It was made with a slightly modified version of The Reverendís wort stream, but not with the usual yeast strain or fermentation temperature. The experiment was to transfer the wort at 68F, not turn on any refrigeration to the tank, and let the yeast carry the beer to whatever temperature ísurvival-bilityí of the fittest allowed. The tank reached into the low 90sF. The yeast base is comprised of four equal parts of French Saison (Wyeast 3711), Bier de Garde (Wyeast 3725), Farmhouse (Wyeast 3726), and Belgian Saison Ale (WL565). During the very last phase of fermentation, the beer was racked off into kegs and allowed to fully carbonate in the barrel to create a lively and playful 11.2% abv íkeg-conditionedí beer. UPDATED: MAR 21, 2009 Draft at Avery. Unfiltered and hazed golden amber colored body with a fine off-white head. First whiff is strong dusty saison yeast, but itís quite cold and as it warms the more sweet candy sugar and pear brandy notes tend to dominate. Up front itís basically all candy sugar, coming across as a mixture of pear, peach rind, sweet oranges, that whole thing. A lot of this is present is the base Reverend and I tend to find it unappealing in this beer as well. Body is medium to full frothiness, but itís completely forgettable. When warmer the nose is mostly alcohol oranges and pears, sweet and full of candy sugar, twangy as well. Becomes unpleasant and brash.

Crushed with Carythedude and jakebra at the brewery. Yeasty aroma. Flavor is saisony, but with a lot more malt. Cool, fun experiment to try with friends.

On tap at the brewery. Big rich, fairly malty. The experiment with yeast shows, lots of yeast. Tasty though, and drank easy.

Crushed with Jakebra and Honkeybra on tap at the brewery. Honkey said it best: itís a very malty saison. Apparently itís an experiment of Reverend wort with three strains of yeast in it. Itís very yeasty, but itís pretty cool. Smooth and malty as well. Pretty cool.
