Jacob Spears, our 6th Great Grand Uncle, is credited as the first distiller to label his whiskey "Bourbon." He built his distillery in Bourbon County, Kentucky in 1790 - 203 years before began brewing. While obviously a bit too late to produce Uncle Jacobís wash, weíve instead created something far more complex. In his honor, we present this robust, silky smooth, full-bodied and altogether extremely American rendition of an Imperial Stout aged for 6 months in the very finest bourbon barrels. This explains a lot about our penchant for big brews! Itís in our blood!
Brewed with Rocky Mountain Water, Malter Barley, Flaked Oats, Hops and Yeast.

Black with small tan head. Aroma is full of very sweet chocolate. Flavor is similar, over sweet, chocolate, almost no bourbon or roast. This is alright, but too sweet and lacking complexity.

Batch no 4. Bottled Feb 13, 2015. This was poured into a mini snifter. The appearance was a dark brown close to black color with a thin concave lacing after a one finger off white head dissipated within about a minute. The smell had a sweet bourbon with nice roasty notes and a smooth sticky chocolate with an underlying gently smokey oakiness. The taste was sweet and roasty smooth leading into a big super smooth roasty aftertaste and finish. On the palate, this one sat about a medium on the body with sticky notes strolling over my tongue. Carbonation was felt nicely. Overall, I say this was a wonderful bourbon barrel stout that I would definitely have it again.

Bottle, opaque black beer, brown sugar colored head fades to a skiff leaving some lace. Aroma is bourbon, vanilla, sugar cookies, oak, raisins, toasted barley. Taste is bourbon, vanilla, peanuts, anise, cookies, alcohol, molasses, shoyu. Palate thick, nearly syrup, carbonation subdued. Alcohol is strong, but doesnít taste like 17%. Sweetness is, however, a bit much. As desert itís ok, but I donít even want to finish the 12oz. bottle in one night.

Heavy hitting flavor at once. BourBon filters slowly down your throat and relaxes there. Deep black color. Tap

Aromas of vanilla, chocolate, caramel, tobacco, bourbon. Black with a mostly lasting tan head. Some sweetness, port-like, raisiny, dark chocolate, whiskey. Full bodied, pretty damn smooth especially considering the alcohol level.

Brown, beige head. Aroma is somewhat green, nice healthy toffee, bit of ashes. Probably needs more time before all characteristics come out. Taste has some raw chocolate, coffee liquor, sweetness also there. Alcohol intense but still wouldnít say itís almost 17 percent. Nice long-sipping beer. Sweet, spicy, vanilla, bourbon, good stuff. Bit too fresh maybe, would love to try the aged version in the future.

April 18, 2015. Bottle at home, vintage 2012 (17.42%). Received in a trade with Ratman197, thanks!
Disclaimer: Drinking this to celebrate my first niece (so Iím finally Uncle Jacob), therefore some bias might occur...
Dense black with a very small brown head. Aroma is bourbon, vanilla, chocolate, canned peaches, oak, roasted malt, prunes, alcohol and light dried fruits. Taste is sweet and bitter in a very good balance, toffee, dark bitter chocolate, bourbon, vanilla, peach. Finish is bitter roasted with sweet toffee, bourbon and peach notes, warming alcohol. Full bodied, smooth creamy oily texture and soft carbonation.
