Delicious lemon and vanilla scented wheat beer with yeast. This is an aristocratic beer with a champagne sparkle and a beautifully sustained head. With the pale color of mountain honey and tart refreshing palate, it is a "brut" beer with the delicious, complex fruitiness of extra-dry champagne. Bottle conditioned and top fermented, it is a benchmark for this style of beer. The nose is fruity-spicy, herbaceous with lots of flowers, and fruit. With such a creamy head, you can build miniature mountains that resemble the Alps. Pour slowly, fill the special weissbier glass half full and swirl the bottle on the table to put the yeast in suspension.

(sample) Pours a cloudy straw color. Aroma of banana, bubblegum and wheat malt. Tastes sweet. Mouthfeel is watery with a hint of hoppiness in the finish.

500 ml bottle, poured into a tulip glass at approximately 45 degrees F. A: Pours a beautifully cloudy deep straw gold, and forms a spectacularly frothy head of tight white bubbles. The head alone leaves lacing down the glass as it recedes, and so too the beer itself, in sheets of tightly-entwined froth that slowly split apart to slip down the sides of the glass in small patches. Columns of tiny bubbles can be seen erupting continuously from the bottom of the glass, only to vanish about half an inch into their ascent, obscured by the cloudiness. S: A rich bouquet of wheat, fruit, and spice greets the nose from the glass. Banana, apple, pear, and honeydew melon skip along arm-in-arm, amidst softly, faintly bready wheat, while clove and coriander cavort alongside. T: Bliss. So much fruitiness, packed into a single beer without overdoing the intensity or going over the top. No one flavor leaps out, but instead, all seem to hit and subtly dance and shift about in unison. All the fruits from the aroma are present, all rolling through the backdrop of silky wheat to precisely the same degree, with exactly the right amount of spice from the clove and coriander notes. A hint of a citrus tinge rounds out the flavor profile. Delightful. M: Light, airy, and lively, this hefe sparkles across the palate and tongue, yet manages to avoid having the carbonation sharpness appear in the taste. O: This is, to me, the perfect hefeweizen, and quite possibly the perfect beer - flavorful yet subtle, complex yet approachable, refreshing and intriguing, able to be drunk quickly or sipped and savored. I have no idea how Ayinger works this sorcery, but I am eminently pleased they do.

33cl beer. Hazy pale yellow colour with a small white head. Banana, yeast, spices and bread in the aroma. Average carbonation and medium body. Taste is well balanced with some fruity notes coming out of the bitterness. Overall, a very good weisse.

Reviewed from old notes. 500ml bottle. 5.1% alc./vol. Pours a pale gold colour with a small lasting white head. Aroma of wheat, bread, and yeast. Taste has banana, yeast. Crisp beginning leads to a smooth finish. Creamy body.

cloudy yellow-white with thin, coarse, and fast-fading white head. Aroma is a tart yeast, wheaty flavor, light spice, bit of cloves. I would have thought it was a great but subtle Belgian blonde aroma had I not known better. bit of semi-sweet apple cider. Body is a little oily-to-watery, with light, fat carbonation. little burn. Flavor is a bit tart and lemony grain, with hints of banana bread underneath. A very pleasant Weiss, not over carbonated (Hoegarden :( )nor overly banana (like some American attempts.) Yum!

Colour: straw gold with a rich white head. Nose: citrus, orange, vanilla, wheat (bread). Tingling carbon sensation. Quite rich. Flavours: Lemon, mandarin, banana. Rich, creamy and full of flavour. Finish: long, fruity, mellow and thirst-quenching. Verdict: amazing hefeweizen. One of the finest and most original today.

On tap at Ayinger bierstube, Aying. This weizen uses, as most of the bavarian breweries, the famous Weihenstephaner yeast. And it resembles my all-time favourite Weihenstephaner Weizen. Deep dark yellow to light orange color, hazed, big creamy white head looking like snowy mountains that does’t fade quickly and remains til the end. Weizen perfume on the nose. Classic aroma, very malty with what, orange, banana, vanilla and yeast. Taste is well balanced. Body is medium, soft, smooth, texture tends to be creamy and partly dusty. Finish is dry, very clean. This come closer to the HB one, which i like a lot too, would need to be ’darker’ and add in a bit more hops to pair with the weihenstephaner but still a rock solid and extremely pleasurable top-notch weissbier.

Drank from a pint glass poured from a twelve ounce bottle. Aroma of bread combined with sweet and slight spicey notes. A good solid hefeweizen. The taste of banannas is not overpowering in this brew.
