COMMERCIAL DESCRIPTION
Our Ayinger Ur-Weisse is an old-fashioned wheat with some fine roasted malt to give it more color and flavor than golden hefe- weisse. It has an immense crown of lovely foam held proudly above a robe of translucent amber. On the palate, malt and yeast predominate, with a delicious balance of fruit and bread-like yeast. The taste is complex, with suggestions of soft fruit, apple, and, in the finish, perhaps, even cloves.

Thick foamy head dissipates quickly. Five minutes later I was left with one of the most unpleasant looking murky brown substances ever put in a beer glass. It looked like dirty dishwater. Luckily the taste is still fine. Highly carbonated, malty, wheat taste with undertones of fruity sweetness.

500 ml bottle. Pours slightly cloudy and light golden amber. Aroma of chestnut malts, banana, light clove and yeasty wheat. Mouthful is creamy light and effervescent. Delicious wheat, yeast, banana and malt dominate the flavor profile.

Poured from a pint bottle into a weizen glass in late 2013. A: Large, fluffy head. Beautiful caramel color. S: Banana, wheat. T: Banana, wheat, some caramel and banana bread crust sweetness. Delicious. M: Creamy smooth. O: I loved this one. The banana flavor was not overwhelming, but nicely balanced. It had a bit more malt flavor than a regular hef. This is my favorite dunkel.

Ayinger Ur-Weisse (DE) - Dunkelweizen - 5.8% - 4.4/5

On tap at Ayinger Braustuberl, Aying, august 2014. (also bottled, right now)
Dark orange to hazelnut color, obviously cloudy, enormous white head, magnificent. Not dark as other dunklers.
Quite perfumed, not excessively though.
Intense weizen aroma (wheat), sugary malts, fuity and spicy. Banana, peach, yellow fruits with hints of lemon. Doughy yeast, yet not too invading. Alcohol reminded me of whiteboard marker, thus bottled i didn’t find this. Some grassy hops comes to say hello thru the finish.
Articulated fruity taste, sweetish, slightly sour, full bodied, long finish with an amaretto/almond thing, very tasty. Proper carbonation, dusty to creamy texture, very fluffy. Excellent. WOW, the finish is just superb, sticky, ultra-umami.
Also bottled after 5 months doesn’t lose its freshness. Probably this is THE dunkelweizen, either not really dunkel, it’s a powered up weizen, simple, classic, elegant. A whoppy 4.4 for a classic non-experimental beer? Well, yes. Pick your bags, go to Aying on a nice summer day, sit at their stube and have one of this. You won’t be in need for any Double IPA, Quadrupel or whathever. Just enjoy.
