This barrel aged dry cyser (’size-er’: a honey wine made with apples) was made with fresh-pressed Michigan apple cider and aromatic Michigan wildflower honey. Fermented to dryness and aged in charred American oak barrels. Huge apple aroma is complimented by the flavor of honey and oak with a warm smooth finish.

Bottle… Clear off-golden mead with long syrupy legs. The aroma is lactic buttermilk up front, then I dig in and am able to separate a few components - alcohol, sour apple and toasted oak. Medium-bodied with faint carbonation. Tart, lactic, dry flavor and finish. Bottle courtesy of darkguardian!

Bottle courtesy of darkguardian. Clear pale yellow pour with no head. Apple wine nose. The taste pretty much follows suit. Not really my thing...

Bottle. Purchased at Sicilano’s in Grand Rapids,MI. This is my first real try at Mead. Poured into a wine glass a clear, pale yellow color. The aroma is notes of both apple and pear. Sweet honey start slowly transitions to a oaky character. When they say dry, they weren’t kidding. Warming effect from the alcohol. Leaves long trails of legs on the glass. Overall, less sweet than other meads I have had but flavorful. Medium mouthfeel. Enjoyed.

375 mL bottle. Pours straw yellow with sparse fine particles and a very few bubbles on the surface of the glass. Musty smell, oak, apple, maybe chemical smell in the must. Flavor leads with apple and white grape, must and oak, honey and white bread. Dry, with some tartness and tannins. Not bad here, and it’s good to know I can get some enjoyment out of a dry mead.

Pours clear yellow. Nose of McIntosh apple, honey, oak and vanilla. Taste is mostly oak - overpowering all other flavors. Some honey, apple and hint of vanilla. I much prefer the other cyser. Medium body.

The aroma is fruity and slightly sweet with alcohol and only faint honey. The appearance is almost clear but slightly yellow. The taste is dryer than the aroma which is not a surprise based on the name. There aroma elements are there but its very dry and has a touch of sake in it. The palate is thin. Overall I am not a fan it’s not bad but not good either.

pours almost clear with just a hint of straw. aroma of green apple, vinegar, honey and a touch of oak. heavy vinegar, that is. flavor isnt as dominated by this as the nose...nice and dry, it gives rise to subtle apple and honey. cuts off the sometimes cloying aspect of meads. nice, sour finish backed with some wood and florals..alcohol is well masked
