pours almost clear with just a hint of straw. aroma of green apple, vinegar, honey and a touch of oak. heavy vinegar, that is. flavor isnt as dominated by this as the nose...nice and dry, it gives rise to subtle apple and honey. cuts off the sometimes cloying aspect of meads. nice, sour finish backed with some wood and florals..alcohol is well masked

Bottle. 12.7 oz. Split with Vinnie. Pours a Chardonnay white with absolutely zero head straight from the bottle. Aroma of very modest and subdued; notes of candied apples, green grapes, oaky bourbon, slight fresh cut grass, and huge honey and boozy notes. The mouth is very much like apple cider; loose, juicy, and slightly sticky. Light, supple bodied with a sweet, crisp, soothingly warm, wet finish. Flavors are dominated by the apple and, later, bourbon on the back of the tongue. Very interesting mead, indeed!

Bottle shared by sleestak. Thanks, Jeff! Pours a near transparent golden white grape hue, light, small bright white head as a film, light lacing. Aromas are deep crisp apples, honey, bread, moving into vanilla tannins, wet oak, and touches of murky deep sweetness. Initial is light bodied, mellow sweetness, crisp roasty apples, honey, apple cider. Touches of faint spice, bread, some syrup, and faint maple. Finish is fairly clean, crisp apples, sweetened, some sugar, ripe apples, honey, barrel tannins, vanilla, wet oak. Gentle and light, hides it’s abv.

Bottle. Poured a clear, pale, yellow. Slightly boozy nose, notes of apple, honey, and light oak. Light to medium body. Flavor is pretty dry, big green apple note, light honey and a touch of vanilla. Finishes dry.

3/18/11. Bottle courtesy mlunger12! Clear light yellow pour. Sweet apple alcoholic aroma with a dose of oak, honey, and vanilla. Very dry flavor with a hint of honey, apple, and oak. At first sip it reminds of a very dry white wine or an alcohol.

375 bottle shared with the Tallahassee crew. Sweet, Apple aroma, slightly tart, very dry, very little alcohol presence. I can taste the Apple but it doesn’t overwhelm the other elements of the Mead. Very nice.

Pours a light fancy maple syrup hue. some bubbles form on top for a few seconds. Smell is delicate clean honey sugar. Oak is vanilla and a touch of coconut. Quite a complex taste on this one. At first it’s dry cider and some acidity with the smallest amount of sugar in the mid palate. it finished with a rich oaky honey sugar vanilla melody. The after taste is baked honey coasted apples and vanilla. the feel is overall dry and a touch tannic. light bodied. overall this is another wonderful offering that i would like to revisit

375 mL botle at Oldsmar Tap House. Pours a very clear light yellow with no head. Nose is a hint of apple with slight honey, oak, and booze. Flavor is similar with a dryness not present in other B, Nektar Meads. By far the dryest B. Nektar I have had to date. Light to medium bodied and dry with small apples all over.

De couleur dorée très claire laissant un fin filament huileux sur le verre.
Arôme a de subtiles notes de tonneau et de chêne, au nez, je note la pomme ainsi que la pelure de pomme qui donnent cet aspect unique. Le miel et fleurs des champs donnent à l’hydromel ce cote de cire naturel.
En bouche, l’hydromel est comme décrit, sec avec la pomme qui donne un ton aigre et acide en bouche qui se mélange bien avec le chêne et une fine note de vanille.
