COMMERCIAL DESCRIPTION
Dark Dark Goose The Inspiration We approached this mead with inspiration from the imperial stouts aged in bourbon barrels we love so much. These stouts have a small percentage of dark roasted barley that gives the burnt toasty flavors. But they also have a lot of malt background. We decided to see if we could approach a mead in the same way. The Coffee We took a field trip to Chazzano Coffee Roasters in Ferndale, MI to meet with founder and coffee expert, Frank Lanzkron-Tamarazo. As usual, Frank pulled out all the stops and soon we had about a dozen french presses of different coffees roasted to different levels. We evaluated each one for a couple of hours until we had just the right combination. We eventually settled on a blend of 75% Nicaragua Maragogype Superior Las Segovias (French roast), and 25% Yemen Mocca San’ani (full city roast). For a full explanation of the roasts, Chazzano’s website has an excellent explanation. The Honey We wanted the honey profile to be as rich and complex as the coffee we selected, so we eventually settled on a 50/50 blend of Wildflower and Buckwheat honey. Each was sourced in its raw form from beekeepers in Michigan. The Barrels After fermentation, the mead was aged in a bourbon barrel. In October of 2011 our co-founder, Brad, drove his piece of junk car to Chicago to meet with the head of Goose Island’s barrel program. He returned with a coveted barrel (on the roof of his car) that was used to age their Bourbon County Stout. We then aged the coffee mead in this barrel until the summer of 2012. Welcome, the Dark Dark Goose.

Clear brown pour. Aroma hits with sweet coffee, syrup, bourbon, charred wood. Flavor is sweet, loads of coffee, tons of sweet honey and maple syrupy notes, the bcs flavor melds so well with this coffee. The bourbon notes are a bit soft and thats just perfect. Wow what a tremendous beverage!

Bottle huge thanks to Greg. Pours nicely brown clear. Aroma is extremely intense sweet coffee honey and floral, adding bourbon impy and vanilla coconut too. Flavor is just like aroma an explosion and mix of all flavors in a well balanced mix, very velvety, nicely boozy and with so nice earthy tones; almost like a wet pot of flowers. Finishes longlived coffee vanilla sweet warming alcohol.

Bottle @ a recent bottleshare... Poured clear brownish with no head. Nose had so much coffee and barrel character. Flavor wise was similar, but so much sweetness added into the mix. This tasted awesome. Coffee, barrel, sweet honey mead. Can’t go wrong with this delectable beverage.

Bottle thanks to Kyle! Pours a clear deep amber with no head whatsoever. Aroma has a good amount of coffee with a nice honey note and a hint of barrel underlying. Flavor starts with sweet honey and a bit of BCS with a nice growing coffee note that melds well with the BCS note.

375 ml blue bottle. Pours a brown color, still liquid. Aroma has chocolate, coffee roast, and some vanilla. This smells like dessert. The taste is interesting, like someone mixed a mead with Bourbon County Stout which seems to work together. The coffee is the first thing you taste then the honey sweetness shows up along with some vanilla. The coffee adds a bitterness profile as well. It says it’s sweet and it is. I would not want to drink anymore than what comes in the bottle.

375 ml bottle mail ordered from the brewery. Tasted side-by-side with a 2011 BCS. Pours a richer dark iced tea hue. Darkness in the middle, some touches of loose bubbles. Faint lace. Aromas are richer oak, vanilla, and bourbon. Coffee beans, gentle roast, toast. Kisses of cocoa, vanilla. Toffee, more used coffee grounds. Good fresh aromas, richer barrel, vanilla. Initial is medium bodied, a touch of thickness, sweeter honey and touches of coffee. Roast, some toffee. Vanilla, oak, gentle spirit grows. Honey sweetness is a bit thick. Touches of oak, vanilla, and barrel. Gentle apple, honey. Coffee grounds, a bit older, a touch of hazelnut, nutty earth. Kiss of cherry, honey, grass. Finish is a bit sticky, oak, coffee. Not hot, a bit sweet overall. Good barrel flavors, nice to try. The Goose influence is mellow, well integrated spirit, vanilla and wet oak. Coffee is firm. Nice mead and interesting, unique.

Thanks Adam! Pours brown with no head. Aroma sweet caramelly honey, nutty, coffee, hazelnuty, booze. Flavors sweet honey and nutty, vanilla, coffee. Kailua-esque. Pretty tasty.

Bottle - pours a viscous clear brown. Coffee dominates the nose with some floral honey notes. Coffee, complex honey, bourbon heat, toffee, vanilla and tannin wood notes from the barrel. Really, really fine - mead can be an amazing thing and the B. Nektar guys are masters. This would be fun to have alongside some coffee BCS!

Thanks to MeadMe for this one! It pours clear amber with some nice legginess along the inside of the glass. The aroma is sweet honey and then booze with a bit of earthiness around the edges. The taste has rich yummy coffee mixed with sweet honey nectar and then a modest degree of barrel booze notes. Solid mix that stays harmonious from beginning to end.
