COMMERCIAL DESCRIPTION
A ’pyment’ is a mead made with grapes. This one is made with Shiraz grapes, clover honey and aged on toasted oak. Only 8 gallons were made back in April of 2009 and this is batch #30. A big, bold pyment with robust dark fruit flavors, a hint of honey and a nice dry finish. Pair this one with your favorite beef or lamb dish. Good for the long haul in your cellar.

Pours a wonderful vibrant hue of red. Aromas are very wine like, slightly vinous with mild sharp tannic notes. The flavor is nice and suble with the Shiraz grapes coming through. Mild tones of oak, and a hint of honey sweetness peeks from behind the wonderful wine like flavor. The finish is on the dryer side, but it is not too dry. I enjoyed it.

375 ml bottle shared with my wife. Pours a clear deep wine red with no head. This is a still mead. Pleasant aroma of Shiraz wine along with a lesser amount of honey. A few alcohol vapors present as well. This was served chilled and initially, the flavors of the Shiraz grapes and honey clash a bit. As the mead warmed to room temperature, the flavor of the honey mellowed considerably and complimented the Shiraz very nicely. My recommendation would be to serve this at or near room temperature. Dries out towards the finish. No real sweetness to speak of, which suits this mead well. Enjoyable.
