A sweet mead made with whole cinnamon sticks, vanilla beans and aged on American oak. We slice each vanilla bean open by hand before adding to the mead to ensure maximum flavor extraction. Serve slightly chilled.

Pours a mostly clear, white-wine color with no head. Aroma is vinous, of alcohol, honey, cinnamon, and a little vanilla. Some smokiness as well. Taste is very sweet, a lot of cinnamon, some vanilla. Like a wine made from cinnamon buns. Alcohol is well hidden for 14%. Finish is sweet, sticky. Medium bodied, almost no carbonation. My first mead, but I like this one a lot.

Pours almost clear, has a slight yellow tint, legs are ok. Aroma is strong on the honey and vanilla, the cinnamon is there but a bit muted. Taste is fantastic, great vanilla flavor and honey hints with a nice cinnamon finish. Good mouthfeel, kinda sticky. Love this stuff.

Refrigerated bottle poured into a snifter. Pours crystal clear, no head, no lacing, medium/light body, light syrupy texture, and aroma is colgne and vanilla. Taste is cinnamon, some vanilla, some honey, some colgne, some warming alcohol, and finishes alcohol. Be sure to serve warmer, a little too much alcohol, pretty good.

It pours clear pale yellow. The aroma is mostly sweet vanilla and cinnamon mixed with honey with some oak notes in the background. The flavour has notes of fresh oak, vanilla and honey. Light citrus. The cinnamon is more profound in the finish. Quite sweet but great for a dessert.

2012-05-04. Very pale yellow, headless body is white wine like. Weird aroma of cinnamon and vanilla, with a weird floral perfume undertone. Smells like a candle. Flavour is quite sweet, mild vanilla and sweet muted cinnamon. Lingering floral and vanilla. Smooth average plus palate is uncarbonated. Flavour is a bit rough. Might work better as an aperitif or similar? Not bad per se but a bit of an acquired taste I think and I found it hard to drink much of it. Bottle from Cloverleaf, Michigan

Thanks to Mabel & Jerc. Appearance: white wine. Aroma: Tons of vanilla, perfume, like mulled wine, cloves, scented candles. Flavour: tons of cloves, cinnamon and fresh vanilla, super strong and Perfumish. Really really really strong Flavour. Like drinking perfume. Honey and perfume finish.

Tasted at Atlantic City Beer fest. The flavor and the aroma are the same, sweet, vanilla, cough syrup. The finish is vanilla, candle wax. Decent. A little to cloying.

Bottle. Poured clear pale color with a small bubbly head and good legs. Moderate to heavy honey and vanilla wood aroma. Medium to full body with a smooth rich texture. Medium to heavy cinnamon honey flavor with a rich rich sweet finish of moderate to long duration. Pleasing rich spice flavor.

Pours an extremely pale yellow with little to no white bubble head...very clear. Slight white winey aroma with notable honey. Vanilla and cinnamon are certainly present. Flavor is honey cinnamon with vanilla coming late. Mouthfeel is super light and the finish is definitely vanilla and cinnamon...can’t tell that its that strong.
