A sweet mead made with whole cinnamon sticks, vanilla beans and aged on American oak. We slice each vanilla bean open by hand before adding to the mead to ensure maximum flavor extraction. Serve slightly chilled.

Bottle at Papsø. Clear yellow coloured with no head. Sweet and fruity aroma of vanilla and caramel with notes of licorice. Sweet and fruity flavour of caramel, licorice and vanilla. Sweet finish of vanilla.

Bottle [750ml] shared with HogTownHarry, garthicus, GregClow, jerc & mabel -- c/o j&m. Pours a clear, very pale yellow-white with a spare diminishing bubbly white head. Very sweet aroma of alcohol, perfume, vanilla and toothpaste. Flavour of alcohol, a lot of it, along with lots of perfume and air freshener. Finish is brutally harsh. Average bodied. I did not like this at all.

Bottle to glass. Looks decent; a translucent yellow. Smells alright; sweet with notes of vanilla and chardonnay. Tastes a little sweet and busy for my liking. Mouthfeel is average. Meh.

Pours a faint cream yellow. Nose is like 98% cinnamon, 2% vanilla. The taste is a sweet blend of honey, boozy, cinnamon, vanilla, and wood. This mead is a winner. It’s a bit boozy and I know the sulfates are going to mess with my sinus’ in the morning, but this is a mead I will actively seek out again, and I and going to try and replicate in a small batch sans sulfates.

Very pale color. Artificial aroma of vanilla. Sweet flavor, with some vanilla and cinnamon; it’s like eating a muffin; not for that bad, but it has nothing to do with real Mead.

clear yellow, small white head. aroma is loads of cinnamon, vanilla, flowery notes, flavor is spicy, cinnamon, honey, flowers. an extremely unusual mead, but woud work well with cookies and dessert.

Bottled. A hazy light yellow mead. The aroma has notes of honey. The flavor is sweet with notes of alcohol and lemons, leading to a tart finish.

Bottle 75 cl. Courtesy of Plovmand. Pours a hazy very pale yellow with no head. Very sweet and vanillaish aroma. Rich body, sweet honey and quite some vanilla.The cinnamon mostly leaves an artificial spicy edge. Very odd! 160612

Pours a mostly clear, white-wine color with no head. Aroma is vinous, of alcohol, honey, cinnamon, and a little vanilla. Some smokiness as well. Taste is very sweet, a lot of cinnamon, some vanilla. Like a wine made from cinnamon buns. Alcohol is well hidden for 14%. Finish is sweet, sticky. Medium bodied, almost no carbonation. My first mead, but I like this one a lot.

Pours almost clear, has a slight yellow tint, legs are ok. Aroma is strong on the honey and vanilla, the cinnamon is there but a bit muted. Taste is fantastic, great vanilla flavor and honey hints with a nice cinnamon finish. Good mouthfeel, kinda sticky. Love this stuff.
