A sweet mead made with whole cinnamon sticks, vanilla beans and aged on American oak. We slice each vanilla bean open by hand before adding to the mead to ensure maximum flavor extraction. Serve slightly chilled.

On tap at the GTMW 2011. Pours a yellowish tinted clear color with no head presence. Aroma is nice with vanilla, cinnamon, honey and booze. Taste is very sweet with honey, vanilla, cinnamon, fruit and alcohol. Very tasty and a nice change of pace on a day filled with massive IBUs and barrel aged goodies.

From the bottle at Plainfield MWBF. Pours a slightly yellowed pale color. Still. Nose is subtly cinnamon & vanilla and wildflower floral notes. Moderate sweetness. On taste, it is very well balanced, oily mouthfeel. Some soft woody cinnamon that accentuates quite well. Some pleasant vanilla comes through as well and surprising is not over the top given the semi-sweet nature of the mead overall. Quite a nice metheglin.

Pour in a wine glass from a 750 ml bottle at The Lions Pride. Pours a clear, pale yellow-gold color with no head or carbonation. Aroma explodes with vanilla and cinnamon, backed by brown sugar, toast, and apples. Fresh cookies! Flavor brings the same vanilla, cinnamon, brown sugar, toast, and apple notes, but more spice and honey is noticeable this time. Apple Cinnamon Cheerios! Medium-bodied, with a smooth, sweet, spicy mouthfeel and no carbonation. Wow, this delivers exactly what it promises. Crazy, interesting, delicious mead.

Sampled on draft at GTMW 2011. Got the last pour of this one. Woot! Pours a clear pale yellow with a creamy white head. Good head retention and lacing. Aroma of honey, cinnamon, other spice notes, vanilla and an earthy note. The taste is sweet honey, cinnamon, vanilla. Medium bodied.

Bottle courtesy bu11zeye. Pours an extremely light and clear straw. So light. Aroma is fairly light. Some notes of baby powder, and soft honey. I might be able to pull some vanilla from this but only because I knew it was in there. Flavor is very nice. Lovely notes of vanilla, coffee, cinnamon. Tastes like coffee cake for sure. Wow this is good.

Bottle at the World Beer Festival Columbia Brewers Party on 01/21/2011. Clear pale golden body with no head. Big vanilla aroma with light cinnamon. Huge pure vanilla flavor with bare hints of cinnamon. Medium full body with no carbonation.

Pour from a bottle. This is a still mead, straw in color. Cinnamon leads the aroma, but also honey and vanilla with a definite alcohol presence. Flavor is very sweet, again leading with cinnamon, backed by vanilla, honey, maybe some oak note. Very smooth. I can definitely say Im a fan of sweet meads by now.

Bottle. Pours off white. Nose/taste of cinnamon sticks, vanilla beans, oak, honey and carmelized sugar. Very sweet. Ever so slight dryness in finish. Good mouth feel.

(sampled at Daks Memorial Day tasting. Not sure who brought this, but thank you!). Pours a light yellow color (white wine like). Aroma is honey and vanilla Taste is sweet and includes cinnamon and some artificial (?) vanilla. Thin bodied with an oily/slick texture. Not a big fan.
