Imperial Stout is the biggest of the black beers and to drink Baird Dark Sky is to experience a foreboding libation. The aroma is gorgeously complex (dry hopping with American Centenniel & Amarillo hops) and the flavor is a stunning smorgasbord (chocolate, toffee, herbs, coffee, licorice, etc.). The mouthfeel is soft and enveloping. The finish is piquantly acrid and warming. Note:- ABV may vary each year.

It’s been a while since I’ve had a Japanese beer, and I’ve been missing them. This was a bottle to a pint glass. Plum, soy, motor oil, licorice, caramel, and black currants. It’s an opaque, dark reddish brown, with just a thin ring of a head, despite trying to shock one out. Also, there is almost no effervescence. Taste is soy, caramel, molasses, lightly toasted malt, buckwheat, a hint of whiskey, and a touch of dark chocolate and sourness. Mouthfeel is slick oil, medium bodied, and there’s a slight warmness. This is a fine brew.

Aroma is deep rich malts, caramel and toffee. Taste is rich almost chewy malts, mocha, chocolate and molasses. Light bitterness on tip but undermine by the thick, almost chewy mouthfeel. Appearance is black with a thin light brown head that retains fairly poorly.

Tap. Still looking nearly black body, no head. Milk chocolate, slight alcohol, dark fruits in the aroma. Flavor is a bit dull, mostly with dark fruit, small chocolate, not much roast, and quite malty and touch dark fruit sweetness. Slight paper comes in which is unfortunate. Medium velvety body.

Bottle. Pours an opaque jet-black with a shallow brown head that disappears quickly leaving only a lacy ring. Nose is milk chocolate, smoke, dried fruit, vanilla, allspice, and coffee. Very dry on the tongue; vanilla and coffee, but with no sweetness. On the midpalate it shifts to umami, herbs, and chicory, with licorice and fennel following. It’s just an amazing melange of surprising and harmonious flavors. The mouthfeel is smooth, round, and glycerine. Finish is all licorice and chicory. Outside the box is a great place to be.
